Tuna-Helper Helper

1 pkg Creamed Broccoli Tuna Helper™
1-1/2 cups water
1-1/2 cup low fat milk
1 can chunk light tuna, including pack water (COS brand)
3 T low-fat soft margarine
2 T dried minced onion
1/8 t crushed red pepper (optional)
1 stalk of broccoli, blanched and cut into bite-size pieces (see NOTE)
1 cup shredded sharp cheddar cheese
Prepare Tuna Helper™ according to package directions except use 1/4 cup less water, as noted above. Add the dry onions and red pepper to the other ingredients at the start. When the noodles are about five minutes from finishing, add the blanched broccoli, and continue a fast simmer. When just tender, fold in the cheese. Let stand about 10 minutes for sauce to thicken and flavors to marry.

Serves four.

NOTE
To prepare broccoli peel off the tough skin from the stem, trim away any woody portions, and separate the florets from the stem. Bring 3 cups of lightly salted water to a boil, add the pieces of stem. After 2 minutes, add the pieces of florets, and boil 2 more minutes. Drain, refresh in ice water, and let drain well.
