2 c very hot water (about 200 ºF)Stir seasonings into hot water. Stir in mushrooms until thoroughly wetted. Cover to hold in heat. Let stand until cool. Drain the mushrooms in a strainer, retaining the liquid to use as broth. Trim and discard tough stems. Use as fresh mushrooms.
1/2 t sea salt
1/2 t sugar
1 c dried shiitake (dark forest mushrooms)
Yields about 6 oz wet weight
