Quick Tomato Noodle Soup with Egg Yolk

Want a warming and filling breakfast on bleak Winter morning? This soup comes together in less than 15 minutes from pantry ingredients. Egg yolks poached in the hot stock adds a bright note of nutrition.

2 T tomato paste
1 rib celery + leaves, cubed and chopped
1 rib bok choy + greens, cubed and chopped
1 qt water
1 pkg Knorr's Tomato Noodle Soup Mix
2 or more large eggs
2 oz cooked chicken or turkey, chopped (optional)

Combine the celery and bok choy in a bowl. Microwave covered on high for 60 seconds. Put the tomato paste and the water into a two-quart saucepan, cover and bring to a boil. Stir in the vegetables and the soup mix, and cook uncovered at a fast simmer. While the soup is cooking, carefully crack two eggs into bowl, taking care not to damage the yolks. After 8 minutes, take the soup off heat, add the meat if desired and, with a spoon, lift each yolk into the hot stock. Whip the egg whites until frothy and spoon onto the soup. Cover and let sit 5 minutes before serving. Divide into bowls, placing a yolk in each. Serves 2 to 4.

Italian-Style Meatballs

Developed January, 2020 as a versatile component of many dishes. Dishes like spaghetti and meatballs, or, in a crusty roll topped with a spicy sauce, or, in a soft bun topped with caramelized onions, or as appetizers on a buffet come to mind.
1 slice white bread, finely diced
milk to cover the bread crumbs
2 T olive oil, divided
1 c onion, finely diced
1 lb 85% lean ground beef
1 egg, beaten
2 t minced garlic
1 t salt
1/2 t ground black pepper
1/4 t crushed red pepper
1 t dried Italian herb mixture
1 T grated Parmesan cheese
Cover the crumbs with milk and stir to form a smooth paste and set aside. Slowly fry the onions in a tablespoon of the olive oil in a small skillet until soft and translucent. Set aside to cool. In a large bowl, gently mix the meat with a large fork until it is broken up. Work the moist bread, beaten egg, garlic, and the seasonings into the meat, one addition at a time. When the sautéed onions are cool, fold them in, and chill the mixture for 30 minutes to firm up. Heat a heavy stainless-steel skillet over medium-high and add the olive oil. When shimmering, form meatballs, about 1-1/4 inch (3 cm) in diameter by rolling between your two palms. Rinsing your hands with cold water as you work helps form balls. Add each to the hot oil as you make them, and fry about 6 minutes after the last one was added. Shake the pan to loosen them as they cook but let them brown. With a spoon and spatula, turn to brown on the other side. Remove and cover for later use.

Spaetzle (German-style noodle dumplings)

Spaetzle Maker (internet)
Developed Spring 2018 from a traditional recipe.
2 eggs
2/3 c milk
½ t salt
¼ t ground nutmeg
2 c flour
¼ c butter or schmaltz
beef gravy (optional)
In a large bowl, beat the eggs well. Stir in the milk, salt, and nutmeg. Half-cup at a time, stir in the flour with a spoon, until all is incorporated.  Let stand 30 minutes to hydrate the flour and permit gluten formation. Bring 4 quarts of salted water to a rapid boil in a six-quart saucepan.  Fill the basket of spaetzle maker with the dough, and position over boiling water.  Pressing down on the dough mass, slide the basket back and forth over the grate until the water boiling slows.  Boil a few minutes until the spaetzlen rise and are firm. Lift out with a mesh strainer to a skillet of hot melted butter or rendered fat.  Fry until crusted on bottom, and top with gravy. Serves six.

Scallops and Egg Noodles in Cream-Garlic Sauce

Developed December, 2018. Luxury in a quick and easy meal.

12 oz diver scallops
1 t salt
1/4 t white pepper
flour
1 oz each of butter and olive oil
1/2 c thinly-sliced shallot or leek
2 T thinly-sliced garlic
1/4 t crushed red pepper
1/3 c half and half or light cream
8 oz pappardelle or wide egg noodles
Bring two quarts of salted water to a boil in a 3-quart saucepan. Add the noodles and boil gently until tender but firm, about 9 minutes. Drain, reserving 1 cup of the pasta water, and keep covered. While the noodles cook, heat the oil and butter over medium in a 12-inch stainless-steel skillet. When sizzling stops, add the shallots, garlic and crushed red pepper, and sauté until lightly colored. Dry the scallops on paper towels and season with salt and pepper and dust lightly with flour. Lower the heat to medium-low and add the scallops. Cook gently until lightly browned on one side, turn and cook the other side. Stir in the dairy, the noodles, and the pasta water. Cook gently 5 minutes with mixing until the sauce is mostly absorbed and the noodles are tender. Add pasta water if needed. Taste for seasoning. Serves two or three generously. Variation: Substitute shelled shrimp or imitation crab meat (surimi) for the scallops. Butter-steamed cauliflower makes a good side dish.

One-Pan Easy Mac and Cheese

Developed September, 2018 from a recipe on America's Test Kitchen TV program on PBS. The method cooks the elbows in milk and water and adds the cheeses after the pasta is cooked al dente. American processed cheese includes 'emulsifying salts' — namely sodium citrate — that yield a smooth melt and prevent the sharp cheddar, there to boost flavor intensity, from oily separation.
2 c milk
3 c water
1 t salt
1 lb elbow macaroni
1/8 t cayenne
2 t Dijon mustard
8 oz American cheese, grated (from deli, not packaged slices)
8 oz sharp cheddar cheese, grated
8 oz sliced ripe tomatoes
Bring milk. water, and salt to a boil in a three-quart saucepan. Be careful to prevent boiling over. Stir in the macaroni, reduce heat to a fast simmer, and cook until pasta is tender and most of the liquid has been absorbed. Off heat, stir in the seasonings and the American cheese until melted. Return to heat and simmer gently 5 minutes. Off heat, stir in the cheddar cheese, top with tomato slices, and cover. Let stand 10 minutes to soften the tomatoes. Stir the tomatoes into the pasta, reheating as necessary. Variation: Replace the tomatoes with 1/2 cup frozen peas. Hint: Freeze the American cheese before grating.

No-Flip Frittata

Developed May, 2017. A frittata makes for a fast, easy, and economical meal combining eggs with leftover dressed pasta. It's especially well suited for brunch. In this ’no-flip’ approach, the awkward step of flipping the half-cooked frittata is eliminated by first cooking the bottom on the stove top and then finish the top under the oven broiler.
5 large eggs
3 T (50 ml) olive oil
20 oz (560 g) leftover dressed pasta
1/2 c (125 ml) grated parmesan cheese
1 t (5 ml) salt
1/2 t (3 ml) ground black pepper
In a large bowl, beat the eggs well, add the salt and pepper, and stir in the pasta. Heat the oil in an oven-proof nonstick 10-inch skillet on medium, and when hot, pour in the egg-pasta mixture. Chop the pasta into somewhat smaller pieces with a spatula. Cook without stirring until the frittata is cooked on the bottom (lift to see) and becomes firm near the top, about 10 minutes. Sprinkle on the cheese and put the skillet about 8 inches below a preheated broiler. Broil until top is browned and bubbling, a few minutes. Serves four generously. Pair with a green salad on the side.

Lemon Orzo Pilaf

Developed August, 2017 in response to a dreadful recipe in a local supermarket ad. Although orzo masquerades as a grain, it is a small rice-shaped form of pasta that is often cooked much like rice. This dish's lemony tang lends it to most any meat or fish as a side.
1/4 c shallots or green onions, finely diced
2 T olive oil, divided
1 c orzo
1-3/4 c hot stock (chicken, seafood, or vegetable)
1 t salt
1 t minced garlic
2 T lemon juice
1 t dry tarragon
1/2 c grated Parmesan cheese (optional)
Heat 1 tablespoon of the oil in a heavy saucepan over medium. Add the shallots, salt lightly, and cook until lightly browned. Mix in the orzo and the other tablespoon of oil. Cook until the orzo is opaque and lightly colored. Stir in the garlic, salt, lemon juice, and the stock. Cover, reduce the heat, and simmer for 15 minutes or until all the liquid is absorbed. Fluff, stir in the tarragon, and the cheese if desired. Serves three or four. Variation: Substitute basmati rice for orzo.

2.5 lbs chicken thighs, trimmed of excess skin and visible fat
kosher salt
all-purpose flour
4 T olive oil, divided
2 T tomato paste
1 medium tomato, chopped finely
6 oz sliced mushrooms
1 medium onion, chopped coarsely
2 cloves garlic, sliced thinly

reserved pasta water, as needed
Season the meat well with salt on both sides, and dust lightly with flour. Heat a 12-inch stainless steel skillet over medium high. Add half the oil. When hot, add the chicken, skin side down. While the meat is browning, prepare the vegetables and seasonings. After about four minutes, turn the chicken and brown the other side. Remove to a plate and cover to keep warm.  Add the remaining oil to the skillet, sauté the tomato paste, tomato, mushrooms, onions, and garlic until lightly browned and soft. Add wine and cook until half gone. Add back the chicken, skin side up, a teaspoon of tarragon, the pepper flakes, and chicken stock to half cover the meat. Bring to a fast simmer, cover and cook until the chicken is done, about 30 minutes. Add lemon juice to taste, about 1 tablespoon and the other teaspoon of tarragon. Discard chicken skin and cut meat from bone. Slice meat and return to pan. Stir in the cooked pasta, adding stock or pasta water as needed. Cook covered until pasta is tender, garnish with parsley, drizzle on olive oil, and serve in warm bowls. Pass Parmesan cheese. Variation: Render skin and fat for schmaltz.

Steamed Littleneck Clams

Developed May, 2014.  The availability of fresh littlenecks from nearby Virginia waters inspired this recipe. "Littleneck" derives from the name of the estuary where they were farmed, not because these clams have 'little necks'. Clams have no necks.
about 20 littleneck clams
1/2 c water
1/2 c dry white wine
1/2 c parsley, whole
1 t salt
2 T olive oil
1 t minced garlic
Rinse the clams briefly under running cold water, checking for grit. Discard any open clams that don’t close when squeezed. Prepare the steaming liquid by heating all the ingredients except the clams to boiling in a 10-inch skillet. Cook at a slow boil until half the volume remains. Discard the parsley and add the clams. Raise the heat to boiling and cover. Steam over medium heat for 5 minutes. Discard any unopened clams. Add the stock and clams to another dish, or serve in bowls as an appetizer, topped with a drizzle of olive oil with warm crusty bread to sop up the delicious stock.

Gnocchi in Brown Butter and Sage

Adapted from Marc Forgione's recipe on Food Network.
1 lb store-bought gnocchi
6 T unsalted butter
1/2 to 1 t crushed red pepper
6 sage leaves, thinly sliced
1/2 c grated Parmesan cheese
Sauce
Melt the butter in a large skillet over medium high heat. Cook, stirring, until the butter develops brown flecks and smells nutty. Watch it closely to keep the butter solids from burning. Remove from the heat.
Finish
Bring 3 quarts of lightly-salted water to a boil. Add the gnocchi, reduce the heat to a slow boil, and wait until they float to the surface. Simmer a minute more. Taste one to make sure it's cooked through. Rewarm the brown butter over medium-low heat. Scoop the gnocchi from the pot with a spider or slotted spoon, transfer to the skillet and toss until some of the brown-butter flecks stick to the gnocchi. Add the red pepper flakes, sage and a few tablespoons of the gnocchi cooking water to form a sauce. Toss again. Add more gnocchi water if needed. Off heat, mix in half of the cheese. Divide among bowls and top with the remaining cheese. Serves 2 as a main course, 4 as part of an multicourse meal.

Roasted Squash and Eggplant Lasagna

Vegetarian Lasagna with Tomato Salad
Recipe and photo by Ben, April 6, 2012. Julian (4 y.o.) liked it. Elliot (18 mo.) loved it. About 30 minute prep if you hurry.
1 medium butternut squash
1 large eggplant
olive oil

6 T butter
3-1/2  T all-purpose flour
2 shallots, minced
1 clove garlic,, minced
2 c whole milk
Handful of chopped fresh herbs (Ben likes oregano/parsley/thyme)

1 lb lasagna noodles, cooked
1/2 lb fontina cheese grated (freeze for 30 minutes first)
1/2 lb mozzarella cheese, grated
grated Parmesan cheese
Filling
Peel and cut squash into 1/2 inch (1.5 cm) cubes. Toss in oil and season. Roast at 425 degrees F (218 C) until tender. Peel and cut eggplant into 3/4 inch ( 2 cm) slices. brush with oil and season. Roast alongside the squash (will take about half the time). Mash the vegetables together while still warm. Set aside to cool.
Bechamel Sauce
Melt butter in saucepan over med. heat. When it foams add garlic and shallot. Cook stirring for 1 min. Add flour and cook stirring for 5 mins. Do not let it brown. Add milk while whisking vigorously. Add herbs. Cover and set aside.
Assembly
Spray a 9 x 13 inch pan. Spread a thin layer of bechamel on bottom of pan, then a layer of noodles, then filling and fontina. Then noodles. Then filling and fontina. Then noodles, then filling, then noodles, then the rest of the sauce. Then the mozzarella and then the Parmesan.

Baking
Bake at 375 degrees F (190 C) for 35 minutes covered. Then remove cover and broil top until brown. Allow to rest 10 minutes before serving. Variations: If you like bleu cheese, it goes nicely instead of fontina. Caramelized onions would be great in the filling. Sliced tomatoes on top are nice, and bacon makes everything better!
