Mignonette Sauce for Shellfish

This simple sauce is the perfect accent for raw, steamed, or broiled seafood.

1/4 c finely-minced shallot
1/4 c red wine vinegar
1/4 c rice wine vinegar
1/4 t cracked peppercorns
1/2 t salt
1 t sugar

Add ingredients to a small bowl or container. Mix well and let stand at least 30 minutes. Spoon small amounts over oysters, clams, mussels, or fish. Keeps well in the refrigerator for a good while.

Quick Radish Pickle

Developed December, 2019. Ideal when you want to add something tangy and colorful to a plate.
1 large red radish
1/2 t red wine vinegar
1/2 t water
1/4 t sugar
1/8 t salt
Shave the radish paper thin on a mandolin or V-slicer. Combine the other ingredients in a small bowl. Stir in the radish slices and hold 5 minutes. Drain and pile like petals as a garnish or accent. Serves 1. Increase proportions as needed to make more servings.

Freshly Pickled Radishes

Developed December, 2017. A tangy, colorful garnish to a salad plate, appetizer, or mezze platter, or to put a tangy crunch in sandwich.
4 oz (115 g) large red radishes
1/2 c rice vinegar
1/2 c water
2 t kosher salt
1 T + 1 t granulated sugar
Thinly slice large red radishes into rounds and place into a tightly-closing container. Combine the other ingredients and pour over the radishes. Close and refrigerate at least two hours. Keeps well.

Red Bliss Potato Salad with Crispy Bacon

Developed January, 2014. Modified from an Emeril Lagasse recipe. Pairs nicely with kielbasa or roast pork.
1 lb red bliss potatoes, about 1-1/2 inches diameter
1/4 c olive oil
1/2 c red onion, short shreds
1/4 c red bell pepper, diced
1 T minced garlic
3 to 4 T red wine vinegar, to taste
3 slices toaster-oven bacon, chopped
salt and freshly ground black pepper
1/4 c chopped fresh parsley
Clean the potatoes, transfer to a saucepan, cover with water by 1 inch, add a tablespoon of salt and bring to a gentle boil. Cook until the potatoes are easily pierced by a paring knife, about 15 minutes. Drain and cool on a clean towel. While the potatoes are cooking, heat the olive oil in saute pan, add the pepper and onion and salt lightly. When softened and lightly colored, add the garlic and sauté another 30 seconds. Take off heat. When potatoes are cool enough to handle, quarter them and place in a serving bowl. Toss with the vegetables and oil, season to taste with vinegar, salt and pepper. Toss with the bacon and parsley. Serve warm.

Zesty Italian-Style Salad Dressing

Developed June, 2007. Similar to a popular bottled dressing, but homemade.
3 oz vegetable oil
1 T red wine vinegar
1 T apple cider vinegar
1 oz water
1/4 t minced garlic
1/4 t dry Italian herbs
1/4 t fresh ground pepper
1/2 t salt
1/4 t paprika
1 t dried minced onion
1/8 t dry mustard powder
1/8 t red pepper flakes
Combine all the ingredients except the oil in a 8 oz bottle or jar with a tight-fitting lid. Shake well to combine and let stand 5 minutes. Add the oil, and shake vigorously to combine before using. Store cold. Yields about 8 servings.

Freshly Pickled Onion and Cucumber Salad

First prepared December 2, 2003. A Family Favorite and SIGNATURE DISH. Especially good with rich foods, such as grilled hamburgers, pork chops, or fried fish.
1 medium cucumber (choose a firm one with little or no yellow in skin)
1 large sweet onion (Vidalia or similar)
1/4 c + 1 T apple cider vinegar
1/2 T salt
1/2 T sugar
Peel and thinly slice (1/8 inch) the cucumber. Mix the vinegar, sugar, and salt in 1-quart bowl, and add the cucumber slices. Peel the onion and thinly slice it parallel to the equator. A mandolin or V-slicer speeds this work. Bring 1-1/2 quarts (1.5 L) of lightly-salted water to a boil over high heat, add the onions, and cover. After it reboils for 30 seconds, drain into a collander and refresh with plenty of cold water. Drain well and add to the cucumbers and mix well. Chill before serving. Adjust seasoning if needed.

Pickled Beets

Developed March, 2006.
1 14-1/2 oz can of sliced beets, drained, reserve juice
1/3 c each beet juice and cider vinegar
1/4 c sugar
1/2 t salt
Dissolve sugar and salt in liquid. Stir in beets. Chill at least 6 hours. Can easily be doubled. Serves 4. Variation: Add blanched or raw sweet onion slices.

Oven-Braised Spare Ribs Smothered in Onions

Created and first cooked December 15, 2005, and many times since. A Family Favorite.
5 to 6 lb slab pork ribs, trimmed of fat and membranes, and cut into 2 rib portions (see Note)
2 large yellow onions, thinly sliced through poles
1/4 c ketchup
1/4 c apple cider vinegar
1/2 c water
garlic powder
cumin
cayenne
paprika (smoked, if available)
Preheat oven to 350 degrees F (177 C). Arrange ribs, meaty side up, in a roasting pan with a cover. Combine liquids and pour over meat; dust on seasonings to taste. Top with sliced onions. Cover. Roast 30 minutes, turn over rib portions, reduce heat to 325 ºF and roast another 60 minutes covered, turning once after 30 minutes. Remove cover, turn meat, and brown for 30 to 40 minutes, basting occasionally. Meat should be very tender, almost falling off the bone. Serve with steamed rice topped with the onions and pan gravy. Fried apples and braised red cabbage make nice sides. Feeds 6 heartily.
Note: Choose small slabs (5 to 6 lbs). They come from younger animals, and are generally more tender and less fatty.

Asian Dipping Sauce

Formulated November 8, 2009 to go with pot stickers and shu mai left from lunch at the Hibachi 101 in Wilson, NC after a morning visit to the annual pre-Thanksgiving pottery sale at Finch's in Bailey, NC.
1 t sugar
1 t rice wine vinegar
2 t white wine
2 t soy sauce
1/2 t dark sesame oil
1/2 t Dijon mustard 
Combine the first three ingredients, and stir to dissolve sugar. Stir in mustard and soy. Stir in sesame oil. Serve at room temperature.
