Bean Sprout Salad

 A quick and refreshing salad ready in minutes. From the Korean cuisine. Modified from https://www.thespruceeats.com/korean-bean-sprout-salad-2118820

8 oz bean sprouts, rinsed

1 green onion, finely chopped
2 t minced garlic
2 t sesame oil
1 t toasted sesame seeds
1 t soy sauce
1 t sugar
1/2 t salt

Blanch sprouts for 20 seconds in boiling water. Drain and rinse with cold water. Dry thoroughly. Place in a bowl and toss with the other ingredients. Chill before serving.

Sub Salad

This salad represents the vegetable toppings from our hot sub sandwiches served as a side salad.
2 c finely-shredded iceburg lettuce
1 oz thinly-sliced red onion
1 oz sliced pepperoncini
4 oz ripe tomato, cut in large dice
1 oz sub sandwich vinaigrette
Combine the first four ingredients in a bowl. Drizzle on the dressing and toss gently to combine. Serve at once. Serves two.

Cranberry Sauce with Mandarin Oranges

Developed on T-Day 2021, using canned mandarins, when it was discovered that DrDaddy had no fresh oranges on hand. Half the sugar comes from the "light" syrup.

1 15-oz can mandarin oranges in light syrup
1 12-oz bag fresh or frozen cranberries
1/2 c granulated sugar
1/8 t table salt
Empty the entire can of oranges into a three-quart saucepan. Break into small pieces with a potato masher. Add the berries, sugar, and salt. Place over high heat, bring to a boil. Mix constantly with the masher. When the berries start to pop, lower the heat to medium and cook about five minutes, mashing and stirring from time to time. When the cranberries are mostly broken up, cover tightly and set aside to cool. Do not disturb or the pectin network will be disrupted and the sauce won't properly gel and will be watery.

Ripped and Torn Croutons

Meant as an accompaniment that brings crunch, flavor, and complex shape, these crusts are inspired by a garnish in a potato soup served at Fearrington House restaurant, in the countryside south of Chapel Hill, NC. They're good for salads too, or as a hot, crunchy snack.
1 cup French bread, torn into irregular pieces
2 t olive oil
1 t grated Parmesan
a pinch granulated garlic
pinch of salt
Heat oil over high heat in a small non-stick skillet. When smoking begins, lower the heat to medium high and add the bread pieces. Keep moving for about a minute. When browning of the edges begins, toss with the cheese and the other seasonings. Remove to a plate to cool.

Boiled Shrimp for Cold Salads

Developed December, 2018. The method prevents overcooking and yields a flavorsome, tender product ideal for a shrimp cocktail or eating off a fork. A tangy cocktail sauce adds to the pleasure.
1 lb large raw shrimp, shells on
1/2 c white vinegar
1/2 c water
2 T Old Bay seasoning
1/2 t salt
In a medium saucepan, bring the vinegar, water, and seasonings to a boil. Briefly rinse the shrimp in tap water and drain. Add the shrimp to the boil, cover, and remove from heat. Let stand until cool. Drain, briefly rinse, and chill. Shell the shrimp just before serving. Serves 3 or 4 on a bed of head lettuce.

Ben's BLT salad

Recorded December, 2018. Everybody's favorite sandwich without the bread. A Family Favorite.
2 c iceberg lettuce, cut into large cubes
4 strips of ‫crispy bacon‬, crumbled
1 large ripe tomato, cut into large pieces
2 T mayonnaise
1 T milk (or water)
1/2 t salt
freshly ground pepper
Assemble lettuce, tomato, and bacon in a bowl. In a small bowl, mix mayonnaise, milk, and seasonings together and dizzle on salad. Toss gently to coat. Serves two or three.

Balsamic Vinaigrette for Salad Caprese

Salad Caprese
Developed July, 2016 from internet recipes. This simple salad combines slices of mozzarella and ripe tomatoes, garnished with a chiffonade of basil leaves, perfect as part of a light summer meal. Caprese refers to the Isle of Capri.
1 oz balsamic vinegar
1/2 T Dijon mustard
1/2 t mashed garlic
1/4 t salt
1/4 t freshly-ground pepper
3 oz extra-virgin olive oil
Add the first five ingredients to a jar with tight-fitting lid. Shake to disperse, add oil, and shake well to disperse. Drizzle sparingly on the assembled salad. Yields about 1/2 cup. Store unused portion cold. Rewarm to room temperature and shake well before next use.

Ranch Dressing

Recorded December 8, 2015. This recipe represents the simple one first used at a dude ranch outside Santa Barbara, California. Guests loved it. In time, the operators made it available commercially.
1/2 c (125 g) buttermilk
1/2 c (125 g) mayonnaise
1/4 t (2 ml) ground black pepper
1/4 t (2 ml) celery seed
1/4 t (2 ml) salt
1/8 t (1 ml) granulated garlic
1/8 t (1 ml) onion powder
fat pinch of dry thyme
Add the first two ingredients by weight or volume into a clean container with a tight-fitting lid. Add the others, by volume. Mix well. Hold for an hour before using to let flavors mature. Yields one cup. Easily doubled. Store cold.

Seafood Cocktail Sauce


Dveloped June, 2015. A traditional tomato-horseradish sauce for shrimp cocktails and other seafood dishes. Chilled shelled shrimp on a bed of crisp head lettuce, topped with a zesty sauce make a classic appetizer.

100 g (7 T)  chili sauce (Heinz™ is good)
25 g (2 T) prepared white horseradish (Kraft™ is good)
3 g (1/2 t) lemon juice
2 ml (1/4 t) salt
1/2 ml (1/8 t) sriracha
Combine ingredients, store cold in a tightly-covered container, and allow the sauce to mature overnight. Provides about 7.5 carbohydrate per 30 g (2 tablespoon) serving.

Skillet Garlic Toast


Developed June, 2015. Add crunch and flavor to soups and salads, in a few minutes on the stovetop from pantry ingredients. For a similar product prepared in a toaster oven see this recipe.
4 oz (115 g) supermarket French bread
low-fat margarine
granulated garlic
grated parmesan cheese
Preheat a small nonstick skillet over medium heat. Slice the bread crosswise into half-inch thick slices. Spread each slice thinly with margarine and lightly dust on the garlic. Spread the garlic into the margarine. Spoon cheese onto each slice, and press it into the margarine. Invert a slice onto the hot skillet and press firmly. Repeat with the other slices. Toast until lightly browned, about 2 minutes. Turn the slices over, mist lightly with water, and cover. Steam for about a minute. Serves one or two.

Banana in Raspberry Sauce and Cream

Breakfast ready!
Prepared April 22, 2015. Delicious, nourishing, and quick.
1 ripe banana, halved lengthwise and sliced on the bias
2 T (30 ml) cold raspberry sauce
2 T (30 ml) light cream
Place the sliced banana into an 8 oz bowl. Spoon the sauce over the fruit and pour on the cream. Serves one.

Red Bliss Potato Salad with Crispy Bacon

Developed January, 2014. Modified from an Emeril Lagasse recipe. Pairs nicely with kielbasa or roast pork.
1 lb red bliss potatoes, about 1-1/2 inches diameter
1/4 c olive oil
1/2 c red onion, short shreds
1/4 c red bell pepper, diced
1 T minced garlic
3 to 4 T red wine vinegar, to taste
3 slices toaster-oven bacon, chopped
salt and freshly ground black pepper
1/4 c chopped fresh parsley
Clean the potatoes, transfer to a saucepan, cover with water by 1 inch, add a tablespoon of salt and bring to a gentle boil. Cook until the potatoes are easily pierced by a paring knife, about 15 minutes. Drain and cool on a clean towel. While the potatoes are cooking, heat the olive oil in saute pan, add the pepper and onion and salt lightly. When softened and lightly colored, add the garlic and sauté another 30 seconds. Take off heat. When potatoes are cool enough to handle, quarter them and place in a serving bowl. Toss with the vegetables and oil, season to taste with vinegar, salt and pepper. Toss with the bacon and parsley. Serve warm.

Zesty Italian-Style Salad Dressing

Developed June, 2007. Similar to a popular bottled dressing, but homemade.
3 oz vegetable oil
1 T red wine vinegar
1 T apple cider vinegar
1 oz water
1/4 t minced garlic
1/4 t dry Italian herbs
1/4 t fresh ground pepper
1/2 t salt
1/4 t paprika
1 t dried minced onion
1/8 t dry mustard powder
1/8 t red pepper flakes
Combine all the ingredients except the oil in a 8 oz bottle or jar with a tight-fitting lid. Shake well to combine and let stand 5 minutes. Add the oil, and shake vigorously to combine before using. Store cold. Yields about 8 servings.

Fried Chicken Salad

Prepared November 25, 2013. The dish uses leftover fried chicken breast meat.
1/2 lb (250 g) boneless, skinless chicken breast harvested from fried chicken (or rotisserie chicken), small dice
1/2 c celery, small dice
1/4 c green onions, finely crosscut
1 T vegetable oil
3 T lemon juice
2 T fresh parsley, minced (or 1 T dry)
1 t dry tarragon, rubbed
1/3 c mayonaise
salt and pepper to taste
In a small bowl, mix the chicken with the vegetables. Then drizzle on oil and lemon juice, add the herbs, and mix. Mix the mayonaise in gently, add salt and pepper, and additional lemon juice to taste. Makes about a pint. Variation: Substitute roast turkey breast for the chicken.

Bagel and Lox Sandwich

Bagel & Lox Stars at Breakfast
Not a recipe, just a 'serving suggestion'. A recent Sunday breakfast on the screened back deck. A salad of Rainier cherries, champagne grapes, and blueberries, a cup of Columbian Supremo, Norwegian smoked salmon, cream cheese, red onion, & capers on an 'everything' bagel, and a fresh tomato salsa dressed with a balsamic vinaigrette and a chiffonade of basil from L's herb garden.

Bacon and Tomato Salad

Devised June 14, 2013. A 'BLT' without bread or lettuce. The applewood-smoked bacon was prepared in a toaster oven. Mayo perfectly highlights the sweet-sour juiciness of ripe tomato.


Bacon and Tomato Salad
4 rashers of bacon, thick cut
6 slices ripe tomato
1 T mayonnaise
salt and pepper
Prepare the bacon using the toaster oven method on this site, draining it well on paper towels. Cut into bite-size pieces. Arrange tomato slices on a plate, top with small dollops of mayonnaise, and season to taste. Serves 2.

Avocado Salad Dressing

Recorded April 15, 2013. Prepared many times.
2 T fresh or bottled lime juice, divided
3 T extra virgin olive oil
1 t coarse salt
1/2 t freshly ground pepper
1 ripe avocado, sliced into 1/2 inch pieces
In a small bowl, mix 1 T of juice, and the seasonings, and drizzle in the oil slowly while vigorously whisking to form an emulsion.  When combined, fold in the avocado pieces. Mash half of the avocado with a fork and mix gently to form the sauce. Adjust the seasoning and use at once.

To Prepare the Avocado. Cut a ripe avocado (a ripe fruit will feel soft at the stem end) in half through the stem and blossom ends, and twist to separate. Remove the pit by striking it with a sharp knife and twisting it free. Sprinkle lime juice lightly on the cut surfaces, letting the excess fall into the emulsion. Free the flesh from the skin by gradually working your thumb (or the back of a spoon) between the flesh and the skin around the margin until the flesh is free. Sprinkle juice on the back side, slice into small pieces and gently stir into the lime emulsion. Remove the skin and prepare the flesh as before.

Suggestions. Dresses a tomato and lettuce salad nicely. Add sliced radishes, sweet peppers, ripe olives, feta cheese or artichoke hearts for variety of flavors and textures. The dressing can be used on sandwiches, tortas, and wraps.

Tomato-Avocado Salad

Prepared July 28, 2012. Nice as part of summer Mexican meal.
1 large ripe tomato, sliced through the poles
1 ripe avocado, prepared as described
1/4 c (50 ml) thinly-sliced radish
1 c (250 ml) head lettuce, cut into cubes
juice of 1 lime
olive oil
salt, ground cumin, and black pepper
To prepare the avocado, cut in half through the poles, twist to free one half. Strike the pit with a knife and twist to remove the pit. Squeeze lime juice on the cut halves to stop browning. Insert the tip of a spoon between the skin and the flesh, and circle around deeper and deeper until the fruit has been freed. Lift the half out, turn over, squirt with lime juice, and cut into 1/4 inch (6 mm) thick slices. Arrange the tomato, avocado, and lettuce in a bowl. Squeeze on the rest of the lime juice and gently turn the ingredients, aiming to keep the avocado intact. Moisten with a bit of olive oil as needed, turn again, and season lightly to taste. Serve slightly chilled. Serves 2 to 3.

Tuna Pasta Salad

Recorded July 22, 2012. Adapted from Jeremy and Suzanne's pasta salad dish.
8 oz penne rigate, cooked until tender in salted water
1 c grape tomatoes, halved
6 oz mozzarella, cut in cubes
1/4 c thinly sliced red onion
1 can Italian tuna packed in olive oil
2 T flat parsley or basil, minced
2 T lime juice
3 to 4 T vinaigrette dressing
salt and pepper to taste
Chill the drained pasta and place in a large bowl. Fold in the additions and then fold in the dressings. Adjust the seasonings. Serve cold as a light lunch or as part of a summer supper.  Variations For some crunch, toss in a handful of garlic croutons or bite-size pieces of iceberg lettuce.

Antipasto Salad

Antipasto Salad
Served as a first course before gnocchi in tomato cream sauce. A variety of bottled dressings were offered for individual use.
red leaf lettuce
iceberg lettuce
cucumber, peeled and sliced lengthwise
radish, sliced
ripe Kalamata olives
feta cheese, crumbled
green onions, sliced on the diagonal
The platter was chilled before assembling. Tear the lettuces into bite-size pieces. Arrange the other ingredients on top of the bed of lettuce as suggested in the photo.
