Green Pea Sauce for Rice

Developed September, 2018 to be served over Peruvian rice as a side dish with rotisserie chicken.
3/4 c frozen tiny green peas
1/2 c chopped onion
2 T olive oil
1/2 t salt
2 t sugar
1/2 c water
1 T chicken or vegetable stock concentrate (Better Than Bouillon®)
1/2 t rosemary
1/2 t thyme
2 T dry onion
2 T tapioca, potato, or corn starch, suspended in 2 T water

Soak the peas in hot tap water for 10 minutes. In a small skillet heat the oil to medium, add the onions,  salt, and sugar. Cover and cook until the onions are soft but not browned. Stir in the water, the stock concentrate, the dry onions, and herbs. Simmer for a few minutes. Add the drained peas, simmer for five minutes. Stir in the starch and cook until the sauce has thickened. To serve, position chicken pieces on a bed of rice and cover with sauce.

Bean Sprout Salad

 A quick and refreshing salad ready in minutes. From the Korean cuisine. Modified from https://www.thespruceeats.com/korean-bean-sprout-salad-2118820

8 oz bean sprouts, rinsed

1 green onion, finely chopped
2 t minced garlic
2 t sesame oil
1 t toasted sesame seeds
1 t soy sauce
1 t sugar
1/2 t salt

Blanch sprouts for 20 seconds in boiling water. Drain and rinse with cold water. Dry thoroughly. Place in a bowl and toss with the other ingredients. Chill before serving.

Italian Sausage, Onions, and Red Peppers on a Sub Roll

Quick, easy, and tasty! Emulates the state fair staple but substitutes sweet red pepper for the unripe green pepper.

2 4-oz sweet Italian sausages

1 c yellow onion, sliced thinly through the poles

1 c red bell pepper, stemmed and seeded, julienne sliced

2 T vegetable oil

1 t kosher salt, divided

1 t yellow mustard, divided

2 sub rolls, split from the top

Heat the oil in a 10-inch non-stick skillet to 350 F. Add the peppers and a pinch of salt. Fry quickly for 2 minutes. Add the onions, season, and continue frying until the onions begin to soften. Add the sausages to the middle of the skillet and continue frying. Turn the sausages after they have browned on the first side. Continue until browned on the second. Warm the rolls in the microwave. Place a sausage in the middle of each, mound up the vegetables, and lightly decorate with mustard. Serves 2.

Hearty Beef Soup with Mushrooms, Barley, and Black Beans

Developed December, 2022, mostly from pantry ingredients.
1 c (20 g) dry porcini mushrooms
3 T olive oil, divided
6 oz button mushrooms, coarsely chopped
1/2 c carrots, coarsely chopped
1 c onion, coarsely chopped
2 T tomato paste
2 t garlic, minced
1 14.5-oz can Cuban-style black beans (Bush™ is good)
reserved mushroom stock
3 c water
1 T beef stock concentrate (Better than Bouillon™ is good)
1/2 c barley
2 c cabbage, coarsely chopped
1 t salt
1 t sugar
1/2 t ground black pepper
10 oz (300 g) cooked beef steak, cut into 1/2-inch cubes
Rinse the mushrooms briefly and cover with 12 oz of very hot water. Stir and set aside for 30 minutes to hydrate and release their flavor into the soak water. Drain, reserving the liquid and chop them with a few pulses in a small food processor. Do the same for the fresh mushrooms. Heat the oil in a 3-quart saucepan and add the mushrooms. Sauté for a few minutes and then add the chopped carrots. Add more oil as needed to maintain a good sauté. After a few minutes, add the onions and garlic. Fry until onions start to soften. Mix in the beans including the pack water. Add the water, mushroom liquid, and the stock concentrate. Bring to a gentle boil and stir in the barley and cabbage. Cook covered, gently boiling until the cabbage is tender and the barley has swollen, about 20 to 30 minutes. Off heat, stir in the seasonings and beef. Warm through and serve. Rye bread and butter make good sides. Serves 4.

Mignonette Sauce for Shellfish

This simple sauce is the perfect accent for raw, steamed, or broiled seafood.

1/4 c finely-minced shallot
1/4 c red wine vinegar
1/4 c rice wine vinegar
1/4 t cracked peppercorns
1/2 t salt
1 t sugar

Add ingredients to a small bowl or container. Mix well and let stand at least 30 minutes. Spoon small amounts over oysters, clams, mussels, or fish. Keeps well in the refrigerator for a good while.

Five-Minute Onion Jam

Onions Simmering in Oil

Developed Summer, 2021 as a topping for hamburger sandwiches. How the onions are cut and the addition of salt and baking soda are key to shrinking the cook time.
1 medium (about 5 oz or 150 g) yellow onion
1 T (15 ml) vegetable oil
1/8 t (0.5 ml) table salt
1/8 t (0.5 ml) sodium bicarbonate
Slice the onion in half through the poles, trim off ends and peel it. Cut across to yield 1/8th inch (3 mm) half-round slices. Heat the oil over medium to about 350 F in a non-stick skillet, add the onions, salt, and soda, and mix. The mixture should be bubbling actively as water and carbon dioxide is driven off. When brown, soft, and condensed, the onions are ready. Spoon them onto hamburgers or other sandwiches. Serves two. Variation: Scramble with eggs.

Rajas Quesadillas

Developed May, 2020. Easy, fast, cheap, and filling. 

Filling

3 T vegetable oil: divided
1 large green pepper, sliced into strips
1 large jalapeño, seeded and diced
1 cup white or yellow onion, thinly sliced through the poles
1 medium tomato, chopped
1 t ground cumin
1/4 t crushed red pepper
1 t oregano
1 t salt
Assembly & Finish
2/3 c shredded Mexican cheese blend
1/3 c queso cotija or pecorino Romano
1/4 c chopped cilantro
2 large flour tortillas
Heat 2 tablespoons of oil in a nonstick 12-inch skillet over medium-high. Add the peppers and cook until softened and colored. Add onions and tomatoes and cook until soft. Stir in seasonings and move into a bowl. Wipe out skillet and heat the remaining oil. Soften the tortillas by warming in the microwave. Moisten the edge with water. Place half the filling on half the tortilla, top with half of each cheese, the cilantro, and fold in half. Seal the edges and distribute the filling evenly. Heat the remaining oil over medium-high, and carefully position each quesadilla on one half. Cook about four minutes to brown and then turn to brown the other side. Top with tomato salsa.Variation: Add an ounce of shredded deli meat to the filling.

Quick and Easy Tomato-Noodle Soup

Developed August, 2020 from mostly pantry items. Pairs nicely with a sandwich for an easy summer meal. Optionally vegan.
1/2 c chopped celery with leaves
1 T vegetable oil
1/2 c chopped fresh or frozen tomato
2 T dry onion
1 qt water
1/2 t salt
1/2 t thyme
1/4 t celery seed
tomato based pasta soup mix (Knorr™)
1/4 c diced green onions
1 oz deli chicken, diced (omit for vegan)
In a two-quart sauce pan, heat the oil over medium high. Add the celery, lower the heat, and cook covered for 5 minutes. Stir in the tomato and dry onion, cover, and cook a few minutes more. Add the water and seasonings and bring to a boil. Stir in the soup mix and simmer 10 minutes, stirring occasionally. Stir in the green onion and chicken. Serves 4 as part of a light meal.

Tiny Peas and Pearl Onions Steamed in Butter Sauce

Quickly prepare a versatile side dish from pantry ingredients.
4 oz frozen tiny peas
4 oz frozen pearl onions
1 T chicken or vegetable stock concentrate
1 t butter, cut into small dice
1 T water
1/2 t salt
1 t sugar
1 t tapioca starch
Thaw the peas in cold water and drain. Thaw the onions on a paper towel. Combine the vegetables in a shallow bowl, top with the seasonings, and sprinkle the starch over all. Steam for 4 minutes, mix with tongs and steam another 2 minutes, mix and serve. Serves two. Can be doubled.

Broccoli Steamed in Soy-Sesame Sauce

This dish is an adaptation of the same technique first applied with tender vegetables. Simply put, freshly-cut vegetables are seasoned, sauced, and steamed in a one-dish process. From improvised steamer to the table in a few minutes.
8 oz (250 g) broccoli crowns, cut into large florets
2 green onions, cut into 2 inch lengths
1 T soy sauce
1/2 t dark sesame oil
1 t chicken stock concentrate
1 T water
1 t tapioca (or corn) starch
Arrange the vegetables in a flat bowl. top with seasonings, add water, and sprinkle on the starch. Hint: tapioca or corn starch in a shaker jar facilitates this step. Place into an active steamer. After 4 minutes, with tongs, cautiously toss the ingredients together. Continue steaming another 5 minutes or until tender. Toss again and serve. Optional: Garnish with toasted sesame seeds.

Steamed Vegetable Combo

Developed February, 2020, the method quickly produces a side dish in a savory Asian-style sauce. Vegan or not.
8 oz assorted tender raw vegetables, cut into serving size pieces
1 t soy sauce
1 t roasted sesame oil
1/4 t fish sauce (omit for vegan)
1 t chicken or vegetable stock concentrate 
4 T water
1 t corn or tapioca starch
Pile the vegetables into a shallow bowl. For example, bok choy, spinach; bean sprouts, green onions, shallots, snow peas, sweet peppers, sweet onions, summer squash, enoki mushrooms, and the like work well. Drizzle on the seasonings and sprinkle on the starch. Place into an "improvised steamer". After four minutes of active steaming, cautiously lift the lid and, with tongs, toss the vegetables to coat with sauce. Cover and steam another four minutes. Remove from steamer, toss again, and serve. Serves two.

Italian-Style Meatballs

Developed January, 2020 as a versatile component of many dishes. Dishes like spaghetti and meatballs, or, in a crusty roll topped with a spicy sauce, or, in a soft bun topped with caramelized onions, or as appetizers on a buffet come to mind.
1 slice white bread, finely diced
milk to cover the bread crumbs
2 T olive oil, divided
1 c onion, finely diced
1 lb 85% lean ground beef
1 egg, beaten
2 t minced garlic
1 t salt
1/2 t ground black pepper
1/4 t crushed red pepper
1 t dried Italian herb mixture
1 T grated Parmesan cheese
Cover the crumbs with milk and stir to form a smooth paste and set aside. Slowly fry the onions in a tablespoon of the olive oil in a small skillet until soft and translucent. Set aside to cool. In a large bowl, gently mix the meat with a large fork until it is broken up. Work the moist bread, beaten egg, garlic, and the seasonings into the meat, one addition at a time. When the sautéed onions are cool, fold them in, and chill the mixture for 30 minutes to firm up. Heat a heavy stainless-steel skillet over medium-high and add the olive oil. When shimmering, form meatballs, about 1-1/4 inch (3 cm) in diameter by rolling between your two palms. Rinsing your hands with cold water as you work helps form balls. Add each to the hot oil as you make them, and fry about 6 minutes after the last one was added. Shake the pan to loosen them as they cook but let them brown. With a spoon and spatula, turn to brown on the other side. Remove and cover for later use.

Fresh Vegetable Noodle Soup

Quick first course in a soup and sandwich supper. Four fresh vegetables come together quickly to make a satisfying and nourishing soup.
1 T vegetable oil
6 oz napa cabbage, cut into bite-size pieces
1/2 c green onions, sliced into half-inch lengths
1/2 c sliced mushrooms
1/2 c coarsely chopped tomato
1 t minced garlic
1 qt water
1 packet tomato-noodle soup mix (Knorr™ is good)
1 t salt
1 t sugar
1/4 t freshly-ground black pepper
1/2 t fish sauce (use soy sauce for vegan)
Heat the oil to shimmering in a three-quart saucepan. Add the cabbage and sauté over medium-high for a few minutes. Stir in the mushrooms and green onions, cook a few minutes more, and add the tomato and garlic. When heated through, add the water, bring to a gentle boil and stir in the soup mix. Cook gently 10 minutes, add the seasonings, and adjust by tasting. Serves four.

Quick Scallion and Rice Soup

Developed May, 2019 in response to a need for an easy-to-digest, savory comfort food.
1 qt water
1/2 c scallions, cut on an angle
1 oz tomato paste
1 t salt
1 t fish sauce
2 T chicken stock concentrate
1 t butter
3/4 c rice
Gently boil all the ingredients together, except the rice, for 10 minutes. Add the rice and cook 15 minutes with occasional stirring. Adjust seasoning. Serves four.

Meat Loaf II

Developed October, 2018. Beef and pork are combined with both raw and cooked onion and warm spices to produce a moist meay product.
1 lb lean ground beef
1 lb ground pork
1 large egg
1 slice white bread, cubed, plus enough milk to cover
1 medium onion, finely diced
1 T olive oil
1 t sugar
3 t salt, divided
3/4 cup bread crumbs or matzoh meal
1/2 t freshly-ground black pepper
1/4 c chopped parsley
1 t ground fennel seed
2 t minced garlic
1 t dry thyme
1/2 t ground coriander
Position rack in the middle of oven preheated to 350 degrees F. Add two-thirds of the onion to a small bowl along with the oil, sugar and a teaspoon of salt. Microwave on high for 2 minutes and set aside to cool. Put the bread cubes in a medium bowl, cover with milk, add the egg, raw onion, cooked onion, 2 teaspoons of salt, the parsley, and the seasonings. Mix well until combined. Combine the meats in a large bowl and mix gently by hand until uniform. Next work in the crumbs, and then the egg mixture until well mixed. To mold, pack the meat mixture into a 4.5x8 inch loaf pan and invert it onto a sheet pan covered with aluminum foil or parchment paper. Bake about an hour or until the internal temperature reads 175 F. Tent loosely with aluminum foil and rest about 15 minutes before slicing. A mushroom gravy or beef gravy goes well. Variation: Cut thin slices when cool and serve as sandwiches on challa bread with yellow mustard.

Stuffing for Roast Turkey

Recorded November, 2015. A Family Favorite over many generations for Thanksgiving or any other holiday dinner. This recipe will stuff a 12 to 14 pound bird.
24 oz loaf hearty white sandwich bread (Arnold’s Country White™ is good)
1/2 c soft margarine or butter
1 medium onion, diced
1 carrot, diced
1 rib celery, diced
4 oz mushrooms, chopped
2 sprigs of fresh thyme or 2 t dry
about 3/4 c turkey or chicken stock
salt and freshly-ground pepper
Cube and toast the bread according to the method described here, and set aside in a large bowl. In a large skillet, melt fat over medium heat. Add vegetables and thyme, and sauté gently until tender; remove thyme. When vegetables and bread are cool, combine them. Add stock by the half-cupful, tossing gently after each addition until mixture is moist but still a bit dry since it will pick up moisture during roasting. Season to taste with salt and pepper. Pack stuffing loosely into front and rear cavities and close with pins and butcher's twine.

Marinated Mushrooms

Adapted from an online recipe. Developed July, 2017. Add to salads or serve as part of an appetizer assortment.
8 oz white or brown mushrooms
2 T extra virgin olive oil
2 T red wine vinegar
2 T red onion, finely chopped
1 t garlic, minced
1 t brown sugar
1/4 t dried oregano
1/4 t freshly ground black pepper
pinch red pepper flakes
1 small bay leaf
1/2 t salt
Soak and clean the mushrooms. If large, cut in quarters. Boil mushrooms five minutes in salted water and drain thoroughly. Reserve the mushroom stock for another use or freeze. In a bowl, whisk the seasonings together and add the mushrooms. Let marinate an hour at room temperature. Taste and adjust seasoning if necessary. Refrigerate, tightly covered. Serves 4, easily doubled.

Fried Rice with Spring Vegetables

Developed February, 2017. Other tender vegetables such as bean sprouts, sweet pepper, summer squash could be added or substituted based on local markets.
6 oz (175 g) young asparagus, trimmed, cut into 1/2 inch (1.2 cm) lengths
6 oz (175 g) napa cabbage, bottoms trimmed, cut in half lengthwise, and then crosswise into 1/4 inch-wide (3 mm) strips
3 oz (85 g) yellow or white onion, sliced thinly through the poles
2 t (10 ml) garlic, minced
6 cups (1.5 l) steamed white rice, cooled over night
1/2 c (125 ml) frozen peas, thawed in cold water and drained
1 egg beaten with a fat pinch of salt, sugar and a splash of soy sauce (use egg substitute for vegan or omit)
vegetable oil, as needed
2 green onions, finely sliced across
Seasonings
2 t (10 ml) dark sesame oil
4 to 6 T (60 to 80 ml) soy sauce, to taste
1/2 t (2.5 ml) salt
1 t (5 ml) sugar
Heat a wok over medium heat to about 450 F (230 C). Add 1 tablespoon vegetable oil. Set a kitchen timer to 10 minutes. When oil is hot, add asparagus and salt lightly. Stir fry for 2 minutes. Stir in cabbage, salt lightly, add oil as needed and stir fry 2 minutes. Add onion, fry 2 minutes more. Stir in rice, raise heat, and add a tablespoon of oil around the edge. Stir in seasonings. Fry about four minutes more, turning often, until lightly browned. Stir in peas, and drizzle on egg mixture. Cover and let stand one minute. Fold the egg into the rice. Garnish with the green onions. Serves four as part of a Chinese meal.

Risotto with Porcini Mushrooms

Developed January, 2005. Dried porcini are available online in bulk at modest prices. They keep forever.
1 oz dried porcini mushrooms
2 c boiling water

2-1/2 c water
2 t commercial chicken or vegetable stock concentrate
1 T porcini powder (optional)
2 T olive oil plus some as garnish

1 T minced garlic
1/4 c minced shallot
1/2 c minced yellow onion
1/2 c dry white wine

1 c arborio rice

3/4 c Parmesan cheese, grated
Combine mushrooms and boiling water in a heat-proof container. Stir occasionally. After 20 minutes, drain and squeeze the mushrooms, saving the broth. Chop the mushrooms coarsely and set aside. Combine the reserved mushroom broth, water, mushroom powder, and concentrate in a saucepan. Bring to a boil with stirring and keep hot. In a 12-inch skillet  heat the oil over medium and add the aromatics. Sauté until soft, add the mushrooms with stirring, and when warmed through, mix in the rice. Continue to stir until the rice turns milky, add the wine and continue cooking until the wine is absorbed. Add enough hot stock to just cover the rice and stir. As stock is absorbed add more gradually,  stirring between additions. When all the stock has been added, reduce heat, cover, and cook until the moisture is absorbed. Stir well as you add the cheese, drizzle on olive oil and serve. Serves 4. For vegetarian, replace chicken stock with vegetable stock.

Cabbage, Potatoes, and Onions Braised in Corned Beef Stock

 
Red Cabbage, Golden Potatoes, & Pearl Onions

Developed December, 2016. After steaming a corned beef brisket, a very flavorsome liquid is left that captures the spice, herbs, and meatiness of the beef. This dish exploits this rich liquor to braise the vegetables that complete the meal.
small head of red cabbage, cut into eighths through the poles
1-1/2 lbs (680 g) yellow potatoes (Yukon Golds™, for example), cut into 1 inch (2.5 cm) pieces
8 oz (225 g) frozen pearl onions, thawed
Bring the steaming liquid reserved from preparing the corned beef to a slow boil. Add the cabbage, potatoes, and water sufficient to cover. Adjust heat to a slow boil and simmer 12 minutes. Add thawed onions. Cook another 6 minutes. With a slotted spoon or spider, move vegetables to a platter and serve with slices of corned beef. Serves four.
