Mexican Style Rice - Stovetop Method

This recipe produces a product similar to what is served in many Mexican restaurants in the US. Similar to our microwave version.
1 c long-grain rice

1 T vegetable oil

3/4 t tsp salt

1 t ground achiote

1 t ground cumin

2 T dry onion

1/4 t granulated garlic

1/4 c prepared tomato salsa

1-3/4 c chicken stock

Heat the oil in a saucepan, stir in the rice and salt, and cook over medium for a few minutes until the rice becomes opaque. Stir in the achiote, cumin, onion flakes, and garlic. Heat for 30 seconds and stir in the salsa and stock. Cover and simmer over low heat for 20 minutes. Fluff with a fork and serve.

Mexican-Style Pickled Carrots

ften found on the condiment bar at taquerias, this piquant treat comes together quickly from mostly pantry ingredients. H/T Ben.
1 lb (450 g) carrots, peeled and cut into 2-inch (5 cm) lengths
2 large jalapeños, sliced diagonally
3 garlic cloves crushed
6 oz (175 ml) white vinegar
6 oz (175 ml) water
2 t (10 ml) vegetable oil
2 bay leaves
6 black peppercorns
1 t (5 ml) dry oregano
1 t (5 ml) salt
To a three-quart saucepan, add the garlic, vinegar, water, oil, bay leaves, peppercorns, oregano, and salt. Bring to a boil and add the carrots, onion and jalapeños. Lower the heat to a fast simmer and cook for 15 minutes, uncovered. Transfer to a quart mason jar or divide between 2 pints. If more liquid is needed to cover the vegetables, add equal parts water and white vinegar. Tighten lid and allow to cool to room temperature before refrigerating. Ready to eat after 3 hours but better if pickled for a day or two. Note: If using baby carrots, boil for 3 minutes before lowering heat to a simmer.

Rajas Quesadillas

Developed May, 2020. Easy, fast, cheap, and filling. 

Filling

3 T vegetable oil: divided
1 large green pepper, sliced into strips
1 large jalapeño, seeded and diced
1 cup white or yellow onion, thinly sliced through the poles
1 medium tomato, chopped
1 t ground cumin
1/4 t crushed red pepper
1 t oregano
1 t salt
Assembly & Finish
2/3 c shredded Mexican cheese blend
1/3 c queso cotija or pecorino Romano
1/4 c chopped cilantro
2 large flour tortillas
Heat 2 tablespoons of oil in a nonstick 12-inch skillet over medium-high. Add the peppers and cook until softened and colored. Add onions and tomatoes and cook until soft. Stir in seasonings and move into a bowl. Wipe out skillet and heat the remaining oil. Soften the tortillas by warming in the microwave. Moisten the edge with water. Place half the filling on half the tortilla, top with half of each cheese, the cilantro, and fold in half. Seal the edges and distribute the filling evenly. Heat the remaining oil over medium-high, and carefully position each quesadilla on one half. Cook about four minutes to brown and then turn to brown the other side. Top with tomato salsa.Variation: Add an ounce of shredded deli meat to the filling.

Margarita Cocktail

Simple recipe for a refreshing cocktail from scratch.

3 T (45 ml) tequila
1 T (15 ml) triple sec
2 T (30 ml) lime juice
Moisten the rim of a rocks glass with lime juice, and dip in coarse salt. Fill with ice. Add ingredients and stir well. Serves 1.

Beef Shank Braised in Red Wine with Root Vegetables

Developed March, 2020. This hard-to-find, economical cut was purchased at La Superior Carniceria, a Mexican supermarket in Durham during an OLLI 'Foodie Field Trip, an activity now on hold until the pandemic is brought under control.

Beef Shank Braised in Red Wine with Root Vegetables
4 cross-cut beef shanks
1 large onion sliced through the root into eighths
2 ribs celery, cut obliquely into large pieces
4 carrots, roll-cut into large pieces
1 T minced garlic
3/4 c red wine
1/4 c ketchup
2 T tomato paste
2 c hot beef stock
2 bay leaves
8 peppercorns
3 allspice berries
2 T paprika, divided
1 lb thin-skinned potatoes, quartered lengthwise
Preheat oven to 340 F. Salt shanks well, dust both sides with flour, and snip the outside fascia to prevent curling. Arrange meat in the bottom of a covered roaster and top with vegetables, wine, ketchup, spices, and stock. Dust generously with paprika. Roast 25 minutes. Turn meat and vegetables, cover, lower heat to 315 F, and roast for 30 minutes.  Turn, add the potatoes, dust with paprika, and continue roasting covered until the meat is fork tender, about another hour. Replace water as it's lost. Variations: Omit potatoes and serve over egg noodles, or substitute beef cheek or shoulder for shank.

Easy Carnitas (Double-Cooked Pork)

First prepared May, 2016. A simple method to prepare a flavorsome main dish or an ingredient in another.
2 lbs boneless pork shoulder or country-style ribs
water
1 t salt
1/2 t ground cumin
Cut pork into 1/2 inch pieces. Put meat and salt in a cold Dutch oven and barely cover with water. Bring to a gentle boil and cook covered over medium heat for 20 minutes. Remove the lid and continue cooking with occasional stirring until all the water evaporates and the meat begins to sizzle in its fat. Continue cooking until browned and crisp. Drain and set aside. Serve as part of a meal with rice, beans, salsa, and tortillas or in a taco with toppings of your choice.

Arroz con Pollo

Most cuisines have a fondness for their version of chicken and rice, and all are delicious. This approach to the Mexican classic is modifed from Cooks Country TV recipe. Developed September, 2017.
1 c fresh cilantro leaves and stems, chopped
1 c onion, chopped, divided
1 Cubanelle or Anaheim pepper, stemmed, seeded, and chopped (3/4 cup)
5 garlic cloves, coarsely chopped
1 t ground cumin
2 T lemon juice
salt and pepper
3 lbs (about 6 to 8) chicken thighs, trimmed
1 T vegetable oil
2 c medium-grain rice, rinsed
1/2 T ground coriander
1/2 T ground achiote (annatto)
3 c chicken stock
1/4 c pimento-stuffed green olives, halved
2 T capers, rinsed
2  bay leaves
½ c frozen peas, thawed in cold water, drained
Adjust oven rack to middle position and heat oven to 350 degrees. Process cilantro, 1/2 cup onion, Cubanelle, garlic, and cumin in food processor until finely chopped, about 20 seconds, scraping down bowl as needed. Transfer mixture to a bowl. Pat chicken dry with paper towels and season well with salt and pepper. Heat oil in Dutch oven over medium heat until shimmering. Add chicken to pot skin side down and cook without moving it until skin is crispy and golden, 7 to 9 minutes. Flip chicken and continue to cook until golden on second side, 7 to 9 minutes longer. Transfer chicken to plate. Pour off all but 2 tablespoons fat from pot and heat over medium heat until shimmering. Add remaining 1/2 cup onion and cook until softened, 3 to 5 minutes. Stir in rice, coriander, and achiote powder and cook until edges of rice turn translucent. Stir in broth, olives, capers, bay leaves, chopped aromatics, lemon juice, 1 teaspoon salt, and 1/2 teaspoon pepper, scraping up any browned bits. Nestle chicken into pot along with any accumulated juices and bring to vigorous simmer. Cover, transfer to oven, and bake for 20 minutes. Transfer pot to wire rack and let stand, covered, for 15 minutes. Discard bay leaves, fluff rice with fork and stir in peas. Serves 4 to 6.

Margaritas

A simple recipe for a classic mixed drink using Mexico's two iconic ingredients, limes and tequila, distilled from roasted agave cactus. Prepared in seconds or make ahead. Serves four but can easily be scaled up.
6 oz tequila 
4 oz lime juice
4 oz triple sec
1 oz water
1 oz simple syrup
Mix the ingredients in a 16-ounce measuring cup and use immediately or store cold in a tightly-closed container. Coat the rim of four 9-ounce rocks glasses with lime juice, dip in kosher salt, and let dry. Fill with ice cubes, and pour in a four-ounce serving. Stir and serve. Variations: For a sweeter drink, replace the water with more syrup. For an orange flavor note, replace the triple sec with orange liqueur.

Baked Fish Veracruz Style

Developed June, 2016. This dish comes together quickly, and turns any mild-flavored fish into a piquant entrée. The ingredients reflect both the influence of native ingredients along with Spanish and Moorish flavors that came to the New World during the Spanish conquest of Mexico. Cortez established Veracruz, now a major port on the Gulf of Mexico, in 1519. Red snapper (huachinango) is traditional but any firm-fleshed, mild fish can be used.
1-1/2 lb fish filets (e.g., red snapper, cod, flounder, tilapia, farmed catfish)

2 T olive oil

1 medium onion, sliced thinly across the grain

1 T minced garlic

1 28-oz can prepared marinara sauce

1/4 c chopped green Spanish olives

2 T raisins

2 T chopped parsley

1 T Mexican oregano

1 t ground cumin

1 large bay leaf

6 large pepperoncini, chopped

2 T brine from pepperoncini

salt and pepper to taste
Preheat oven to 425 degrees F (220 C). Heat the oil in a large skillet over medium heat. Sauté the onions until softened, add the garlic, and when fragrant, stir in the marinara sauce, the olives, raisins, oregano, cumin, bay leaf, and parsley. Bring to a fast simmer, cover, and cook 15 minutes. Stir in four of the chopped pepperoncini, the brine and adjust the seasoning. Add a cup of the sauce to a 9”x13” glass baking dish, position the filets in the dish, season well with salt and pepper, and spoon on the remaining sauce. Bake uncovered for 18 to 20 minutes until bubbling and fish flakes easily. Let stand 10 minutes. Garnish the dish with the remaining pepperoncini, and serve with steamed rice. Serves four.

Steak Fajitas

Developed March, 2016 from Internet recipes. Easy, tasty meal that takes very little time to prepare or cook.
1/4 c soy sauce
1/4 c lime juice
1/4 c vegetable oil
2 T brown sugar, packed
1 t ground cumin
1 t ground black pepper
2 t chili powder
2 t garlic, finely minced
1 lb skirt steak, trimmed of fat and membranes, and cut into two pieces
1 large red bell pepper, trimmed, and cut into 1/2-inch strips
1 medium white onion, cut into 1/2-inch segments through the poles
8 small (or 4 large) flour or corn tortillas, softened in the microwave
Toppings: guacamole, tomato salsa, pico de gallo, sour cream, grated cheese, shredded lettuce, chopped tomatoes, diced chilies, salsa criolla, pickled onions, etc.
Whisk the eight marinade ingredients together in a bowl. Transfer the meat to a large zipper-lock plastic bag, and pour in half the marinade. Squeeze out the air, seal the bag, and turn to cover the meat with marinade. Put the sliced vegetables into another zipper bag with the remaining marinade. Express the air and close the bag. Put both bags on a plate and into the refrigerator. Marinade for 2 hours, turning the  bags after one hour. To roast the vegetables, preheat a heavy 8x8 inch metal pan under the broiler of a toaster oven for 5 minutes. Carefully add the vegetables along with 2 tablespoons of the marinade. Caution, it will sizzle. Roast under broiler for about 8 to 10 minutes, until they are lightly charred and softened. Transfer to a serving bowl, cover and set aside. Prepare a charcoal grill with a very hot flame. Wipe the meat dry with paper towels, and place each piece directly over the flame. Cook two to three minutes to get a good char, and then turn it over to complete the cooking, about two minutes more. Do not overcook. Tent to keep warm. Slice thinly across the grain. Serves three to four.

Guacamole II

Guacamole literally means 'avocado sauce'. This recipe is adapted from Ben's recipe for kitchens that lack a molcajete, the lava rock mortar and pestle used traditionally to prepare Mexican sauces (moles, from Nahuatl mōlli). Boost the heat by including more jalapeño.
2 large ripe Haas avocados
2 T lime juice, divided
2 t minced garlic
1/2 to 1 jalepeño pepper, seeds and membranes removed, finely diced
2 t ground cumin
1 fistful cilantro leaves, finely chopped
1/4 c red onion, finely chopped
1 medium ripe tomato, seeded, chopped and drained well
salt to taste
Halve avocados, remove pit and scoop out flesh. Place it in a bowl, immediately moisten with a tablespoon of lime juice, mash lightly with a fork, leaving big chunks, and mix. Add the cumin, jalepeño, cilantro and garlic. Season with salt and residual lime juice to taste. Stir in the onions and tomatoes. Cover tightly with plastic wrap, pressing to contact the dip, and refrigerate. Best if eaten the following day, but it can be served immediately. Serve with tortilla chips, corn chips, or as a side with Mexican dishes. Serves 4 to 6.

Huevo Ranchero Rápidamente al Vapor (Steamed Rancher-Style Egg Pronto!)

Huevo Ranchero with Flour Tortilla
Developed Jan 4, 2016. Makes one serving in about 8 minutes cooking time.
60 g (2 oz) prepared tomato salsa (medium)
1 large egg
cooking spray
1 green onion, thinly sliced 
1 flour or corn tortilla
Prepare a steamer and bring to a boil. Treat a 250 ml (8 oz) glass bowl with cooking spray. Add the salsa, and place in steamer. After four minutes, remove the cover carefully, make a depression in the hot salsa, and crack the egg into the hollow, taking care to keep the yolk intact. Sprinkle on the onions, replace the cover, and steam for four to six minutes more, until the egg is poached. Remove and let stand loosely covered for a few minutes to cool and finish cooking. Loosen the food around the edge with a spoon and slide the serving onto to a small plate, paired with the tortilla, briefly steamed and folded. Serves one. Variation: Substitute a tablespoon of grated cheese such as queso cotija, parmesan, or sharp cheddar for the green onion.

Pico de Gallo

Recorded June, 2013. This fresh salsa is called ‘Pico de Gallo’ (beak of the rooster) because the serrano pepper is fancifully likened to a rooster's beak. Serrano peppers are noticeably hotter than jalepeños.
1 lb ripe tomatoes, chopped
1 c white onion, finely minced
1/2 c sweet red pepper, finely minced
1 jalapeño or serrano pepper, seeds and membrane removed, finely minced
1/4 c finely chopped cilantro
1 to 2 t garlic, finely minced
2 T lime juice
1 t salt
Combine the ingredients in a bowl and gently mix. After chilling for an hour or two, adjust the lime juice and salt. If too tart, add a bit of sugar. Keeps well in the refrigerator. Great side dish for many Mexican meals.

Breakfast Quesadillas

Developed March 12, 2014. Ready in less than 15 minutes, a warm breakfast dish or as party appetizers. 
3 oz sweet peppers, coarsely chopped 
2 t olive or vegetable oil 
2 oz red onion, coarsely chopped 
2 oz ham, shredded 
2 oz shredded quesadilla cheese
pinch crushed red pepper 
4 6-inch flour tortillas, softened briefly in the microwave 
tomato salsa
Heat a dry non-stick skillet over medium high, and add the sweet peppers. Toast with frequent turning until lightly browned and fragrant. Add the oil and the onions. When softened, stir in the ham and hot pepper, and warm through. Set aside in a bowl. Wipe out the pan. As it reheats, spoon one-quarter of the warm filling in the center of a tortilla and top with a tablespoon of cheese. With the back of a large knife, push the filling past the midline, and fold over the tortilla. Press to compact. Bake each foldover in the dry hot skillet until toasted, turn, and finish baking. Cut into points and serve with tomato salsa on the side. Serves two.

Arroz con Leche (Mexican Rice Pudding)

Developed March 12, 2014. Every Hispanic family has its own recipe for this basic comfort food beloved around the planet, a milk pudding thickened with rice. Here, fragrant with orange zest and cinnamon, the natural sugars of golden raisins and milk provide most of the sweetness. Makes a nourishing breakfast dish for lighter appetites, offering a sound balance of carbohydrates, proteins, and fats. As a bonus, no eggs!
1/2 c (100 g) medium-grain (Morelos) rice  (350 cal)
9 oz (250 g) water
1/4 t salt
1 whole piece stick cinnamon
3 pieces of orange zest (cut with a vegetable peeler)
2-1/4 c (500 g) whole or 2% milk (do not use skim), (550 cal), divided
1/3 c golden raisins (165 cal)
2 T (25 g) sugar  (100 cal)
1 t vanilla extract

In a medium saucepan, bring the rice, water, cinnamon stick, orange zest, and salt to a slow boil. Cook, with frequent stirring, until water is almost completely absorbed. Remove  zest, and stir in milk (reserving 1/2 cup), raisins, and sugar. Return to a gentle boil, and, with frequent stirring to prevent burning, cook for about 12 minutes until the pudding is quite thick. Remove cinnamon, cover, and let cool 30 minutes off heat. Stir in the reserved milk and the vanilla extract. Serve warm, dusted with cinnamon as a garnish. Serves 8. About 150 calories for a 4-ounce serving.

Quick and Easy Vegetable Noodle Soup

Recorded August 27, 2012. Pairs nicely with BLT's for a light summer meal.
2 T vegetable oil
1/2 c sweet peppers, large dice
1/2 c mushrooms, sliced
1/2 c baby bok choy, sliced
1/2 c fresh tomato, coarsely chopped
2 green onions, sliced thinly, on the diagonal
6 c hot water
1 t dark sesame oil
2 t soy sauce
1 T mushroom powder
1 pkg Knorr tomato-noodle soup mix
Heat the oil in a 3-quart saucepan over medium high. Add the peppers, sauté until a bit colored. Add mushrooms, and sauté. After a few minutes add the bok choy and the tomatoes. When all are softened, add the hot water and the seasonings. Bring to a slow boil, and cook 5 minutes. Add the soup mix, and cook following package directions. When a few minutes remain, add the green onions. Serves 3 to 4.

Tomato-Avocado Salad

Prepared July 28, 2012. Nice as part of summer Mexican meal.
1 large ripe tomato, sliced through the poles
1 ripe avocado, prepared as described
1/4 c (50 ml) thinly-sliced radish
1 c (250 ml) head lettuce, cut into cubes
juice of 1 lime
olive oil
salt, ground cumin, and black pepper
To prepare the avocado, cut in half through the poles, twist to free one half. Strike the pit with a knife and twist to remove the pit. Squeeze lime juice on the cut halves to stop browning. Insert the tip of a spoon between the skin and the flesh, and circle around deeper and deeper until the fruit has been freed. Lift the half out, turn over, squirt with lime juice, and cut into 1/4 inch (6 mm) thick slices. Arrange the tomato, avocado, and lettuce in a bowl. Squeeze on the rest of the lime juice and gently turn the ingredients, aiming to keep the avocado intact. Moisten with a bit of olive oil as needed, turn again, and season lightly to taste. Serve slightly chilled. Serves 2 to 3.

Queso Blanco Cracker Snacks

Prepared and recorded August 4, 2012. Often, mid-morning or late in the afternoon, a hunger arises that is difficult to ignore. Yet, one doesn't want to kill their appetite for lunch or dinner. Ideal is a small volume, high protein, high fat nibble or nip. These crunchy, cheesy, sweet hot snacks do nicely.
1 1/4 inch thick slice of queso blanco, cut into four pieces
2 t apricot, mango, or jalapeno preserves
4 small crackers
Heat a small nonstick skillet over medium high. Place cheese pieces in the hot dry skillet. Cook 2 to 3 minutes, until lightly browned. Flip, and cook a minute or two more until the second side is also toasty. Arrange each piece on a cracker, and spoon on a 1/2 t of the preserves. Eat cautiously! They will be hot. Serves one.

Chicken Enchiladas

First prepared July, 2012, and many times since. A Family Favorite. Developed from a family friend’s hand-written recipe. The dish is distinguished by using a sour-cream enriched velouté to cover the filled tortillas rather than a sauce based on tomatoes. After baking, it comes to the table as a casserole of hearty flavors and solid nourishment.

Sauce
1/4 c (125 ml) each butter and olive oil
1 c (250 ml) white onion, chopped
2 to 4 jalapeño peppers, ribs and seeds removed, finely diced

3 cloves of garlic, finely chopped
1/4 c unbleached all-purpose flour
2 c (500 ml) chicken stock
1 c (250 ml) sour cream

1 T (15 ml) lemon juice
1 t (5 ml) salt
12 corn tortillas  

Filling
8 oz (240 g) cooked boneless chicken, shredded
1/2 c (125 ml) grated queso cotija cheese (or romano)
1/4 c (60 ml) chopped green onions
1/4 c (60 ml) chopped cilantro
1/4 c (60 ml) chopped parsley
6 oz (175 g) shredded Mexican-style cheese blend

Heat oil and butter in a heavy saucepan over moderate heat, add the onion and peppers, and cook about 5 minutes until soft but not browned. Add the garlic, and when fragrant, stir in the flour, and cook for 1 minute. Gradually stir in the chicken stock, and heat with stirring until the sauce boils and thickens. Off heat, stir in sour cream, lemon juice, and salt. Moisten the filling with a 1/2 c (125 ml) of the sauce, and pour half of the remainder into a greased 9x13 inch (23 x 33 cm) glass baking dish. Soften the tortillas in the microwave under a damp paper towel. Place a twelfth of the filling in a tortilla, roll up, and arrange in the baking dish, seam side down. Continue until all the tortillas are filled. Pour remaining sauce over the tortillas. Sprinkle the shredded cheese on top and bake uncovered 25 minutes at 425 degrees F (220 C) until the cheese melts and is lightly browned. Let cool 10 minutes before serving. Garnish each serving with chopped green onions if desired. Serves 4 to 6. Suggested side: slices of ripe tomato and avocado dressed in lime juice, olive oil, salt and cumin.

Quick and Easy Pinto Beans and Rice

Devised and first prepared May 27, 2012.
3/4 c medium-grain Mexican rice
1 t salt
3/4 c water
1 20-oz can charro beans (La Costeña™ is good)
3 T olive oil, divided
In a tall microwavable container add the rice, salt, and 1 T of oil. Mix, cover loosely, and heat on high (1250W) for 1 minute. Add the water and the entire can of beans. Stir to combine, cover, and microwave on high until mixtures boils and most water is absorbed, about 10 minutes. Stir, cook loosely covered on #3 power for 15 minutes. Drizzle on the remaining olive oil and gently combine. Serves 6.
