Roasted Potatoes and Garlic

Side dish for roast meats and other main courses.
2 medium russet or yellow potatoes, skin on
6 garlic cloves, peeled
1 t rosemary, finely chopped
2 T olive oil
1/4 t salt

Cut the potatoes into 3/4 inch pieces. Place in an 8x8 metal pan, along with the other ingredients. Mix well to coat with oil and seasonings. Roast 30 minutes in a toaster oven preheated to 450 F, turning with a spatula after 15 minutes. Serves 2 to 4.

Quick Onion-Mushroom Gravy

Developed March, 2023. Good companion to grilled or roast meats, meat loaf, mashed potatoes, steamed rice, noodles, spaetzle, or open-face sandwiches. 

1 T vegetable oil
2 oz button mushrooms, finely chopped
1 T all-purpose flour
1 t beef dry rub
1 T dry onion
8 oz hot water, divided
1 T beef or onion stock base (Better Than Bouillon™ is good)
1 T porcini powder
1 T tapioca or corn starch dispersed in 1 T cold water

Heat the oil in a small saucepan over medium and add mushrooms. Fry for a few minutes until they are browned. Stir in the flour, heat for a minute, then add the dry onion, the dry rub, and heat for another minute. Off heat, whisk in a 1/4 cup hot water to form a smooth slurry. Stir in stock base and porcini powder. When incorporated, stir in the remaining hot water, and simmer 5 minutes. Whisk in the starch slurry and heat until it thickens. The recipe is easily doubled.

Variations: Dilute the finished gravy with 1 cup beef stock to make a jus for French dip sandwiches or as a base for hearty soups or stews.

Potato Puff Tuneup

Coarse semolina and oil add extra crispness.

7 oz (200 g) frozen potato puffs (Alexia™ is good)
1 T vegetable oil
1 t onion powder
1 T coarse semolina
Preheat toaster oven to 425 F. Place puffs in toaster-oven pan and thaw 30 minutes at room temperature. Drizzle on the oil and spread by causing the potato puffs to roll around. Next, dust with the onion powder and repeat the rolling motion. Finally, sprinkle on the semolina and roll the potatoes to coat evenly. Roast 15 minutes. Shake the puffs and roast another 5 minutes. Serves two. May be doubled but don't crowd pan.

Kielbasa, Cabbage, and Potato Boil

Developed September, 2020. Fast, easy, and cheap supper.

1 lb kielbasa or similar sausage
1 T vegetable oil
4 c green cabbage, cut into wedges
1-1/2 lb (2-1/2 c) thin-skinned potatoes cut into 3/4 inch pieces
2 T beef stock concentrate (Better Than Bouillon™ is good)
6 peppercorns
2 qt water
  
Cut the sausage into four pieces crosswise and then each piece in half lengthwise to yield 8 pieces. Heat the oil over medium in a six-quart saucepan.  Fry the sausage, cut face down until browned, flip and brown the other side. Add the cabbage, the stock concentrate, the peppercorns, and the water. Bring to a gentle boil.  Cook 5 minutes, add the potatoes (and onions if using), and continue cooking until the potatoes are tender, about 15 minutes. Add salt to taste. Serve in big bowls with some of the stock. Offer spicy mustard on the side. Variation: Add a medium yellow onion, quartered through the root, with the potatoes. Serves four generously.

Leg of Lamb Roasted with Potatoes and Garlic

Developed December, 2019. Adapted from a method shown by Ira Garten on Food Network TV.
Roast Lamb with Potatoes and Garlic
5 to 6 lb (2.5 kg) boneless leg of lamb, tied or netted
1/4 c (half stick) butter
2 T fresh rosemary leaves, finely minced
2 T kosher salt, divided
1/2 T coarsely ground black pepper
3 T minced garlic
4 lb (2 kg) yellow or red potatoes, whole or quartered, skins on (omit for keto)
1/4 c olive oil
8 garlic cloves, unpeeled
An hour before roasting, rinse and dry the roast. Place it in a large roasting pan. Melt the butter in a small bowl in the microwave, stir in half the salt and the other seasonings and spread all over the top of the roast and let stand at room temperature. Preheat the oven to 450 F (230 C) and position the rack to midway. In a large bowl, combine the potatoes and unpeeled garlic cloves, the oil, half the salt, and mix well. Surround the roast with the potatoes and place in the oven uncovered. Roast for 75 to 90 minutes, until the internal temperature reaches 135 F (60 C). Tent with aluminum foil and let rest 15 minutes. Cut thin slices horizontally along the roast. Arrange on a platter with the roast potatoes. Serves 10 or more. Roast asparagus are a good side dish.

Line-Cook Seafood Chowder

Developed November, 2019.This delicious chowder is adapted from a recipe posted to Reddit by a line cook who described it as a “signature soup at my restaurant Patrons love it, and I think you will too.” I agree. Well-balanced, creamy, and economical.
1 oz vegetable or olive oil
½ c (125 ml) chopped red onion
1 c (250 ml) diced celery
½ c (125 ml) diced carrot
3 c (650 g) diced yellow potatoes, skins on
1 T minced garlic
1 T salt
1 10-oz can baby clams with juice + 1.5 cans of water
1 T chicken stock concentrate
250 g cod fillet, or other firm white fish, cut into half-inch cubes
½ T ground black pepper
1 c (250 ml) half and half
2 c (500 ml) milk
1 T dry dill weed
1 T Old Bay seasoning
For the roux:
½ c (one stick) butter
½ c all-purpose flour
In a 6-quart saucepan, heat the oil over medium heat. Add the vegetables, garlic, and salt. Heat thoroughly with stirring, cover, and turn off heat. Let the vegetables sweat for 10 minutes to soften the vegetables. Add the clams, clam juice, water, salt, pepper, and the stock concentrate. Cook over medium heat for 10 more minutes. Add the cod to the pot, and simmer for 5 more minutes or until the potatoes are tender. Meanwhile, in a small non-stick skillet, melt the butter over medium heat. When the bubbling stops, slowly stir in the flour. Cook about 4 minutes with constant stirring until the roux turns a light tan and is smooth. Combine the cream and the milk in a large measuring cup, and off heat, slowly pour half the cold dairy into the roux with continuous whisking. When smooth, mix with rest of the dairy remaining in the cup. Stir the roux mixture into the chowder, add the dill weed and Old Bay, and heat to a fast simmer with stirring until the chowder thickens into a smooth creamy texture. Yields about 2-1/2 quarts (liters). Serve with oyster crackers or hot biscuits.

Quick Vegetable Soup

This soup comes together quickly but delivers solid nourishment, savory taste, and appetizing aroma.
4 c water
1 oz tomato paste
2 c cabbage, coarsely chopped
1 medium tomato, diced
Seasonings
1 t ground cumin
1/2 t ground coriander
2 T chicken or vegetable stock concentrate
2 t salt
1 t sugar
1 t fish sauce
1 t vinegar
1 envelope prepared lentils (Madras brand)
1 medium russet potato
Microwave the potato 3 minutes. When cool, cut into 1/2 inch cubes, and set aside. Meanwhile, in a three-quart saucepan, bring the water to a boil. Add the cabbage and tomato and boil slowly 20 minutes. Stir in the seasonings, the lentils, and the potatoes. Simmer until the potatoes are tender, about 15 minutes. Adjust seasoning. Serves four.

Steamed Then Shallow-Fried Potatoes

Pan-Fried Potatoes
Inspired by a similar dish served at Beachside Bistro in Kill Devil Hills, NC. They call them 'home fries'. Crispy on the outside, creamy on the inside. Developed November, 2018.
12 oz (350 g) small red potatoes (about 1-1/4 oz or 35 g each)
vegetable oil
1/4 t (1 ml) granulated garlic
2 t (10 ml) dry rosemary
1 t coarse salt
1/4 t freshly-ground pepper
Steam the potatoes for 8 to 10 minutes until a paring knife goes in easily half-way. Spread on a kitchen towel and let cool and dry. When cool, quarter the potatoes. Heat 1/4 inch (5 mm) vegetable oil in a 10-inch heavy non-stick skillet to 375 degrees F (190 C). Cautiously, add the potatoes. Fry the potatoes, maintaining the temperature above 325 F (163 C), turning them occasionally. When browned and crispy on all sides, lift them from skillet with a spider, tongs, or a slotted spoon to a serving bowl. Toss with the seasonings and serve immediately. Serves 2 or 3.

Green Bean and Potato Sauté

Developed November, 2017. This is the ideal 'green vegetable + starch' side dish. Based on pantry ingredients, it's easy, quick, and cheap.
1 39-oz can green beans and whole potatoes (Hanover™ brand is good)
1/4 c shallots, thinly sliced
2 to 3 T chicken fat or other fat such as bacon, butter, or olive oil
1 t paprika
salt
Heat the fat in a 10-inch nonstick skillet until bubbling. Add the shallots and salt lightly. Fry with frequent stirring until soft but not colored. Drain the vegetables thoroughly, reserving the pack liquid. Add the green beans to the skillet, separate from the potatoes. As the beans are cooking, slice the potatoes thinly. After about five minutes, add the potatoes, season with paprika and salt, and continue cooking. After 10 minutes, add the reserved liquid bit by bit until about half has been added. Cook with frequent turning until most of the liquid has been lost and a pan sauce forms. Serves 3 to 4.

Cabbage, Potatoes, and Onions Braised in Corned Beef Stock

 
Red Cabbage, Golden Potatoes, & Pearl Onions

Developed December, 2016. After steaming a corned beef brisket, a very flavorsome liquid is left that captures the spice, herbs, and meatiness of the beef. This dish exploits this rich liquor to braise the vegetables that complete the meal.

1-1/2 lbs (680 g) yellow potatoes (Yukon Golds™, for example), cut into 1 inch (2.5 cm) pieces
8 oz (225 g) frozen pearl onions, thawed
Bring the steaming liquid reserved from preparing the corned beef to a slow boil. Add the cabbage, potatoes, and water sufficient to cover. Adjust heat to a slow boil and simmer 12 minutes. Add thawed onions. Cook another 6 minutes. With a slotted spoon or spider, move vegetables to a platter and serve with slices of corned beef. Serves four.

Caldo Chicken-Vegetable Soup in a Tomato Broth

First prepared March 7, 2016. A quick and satisfying meal that offers balanced nourishment and flavor.
2 T olive oil
2 T butter
2 lb frozen caldo vegetable mix (corn-on-the-cob nuggets, red potatoes, pearl onions, celery, carrots)
5 cups hot water
1 cup chopped tomato (fresh or frozen)
1 T chicken base
1 t salt
1 t sugar
1 cup shredded cooked chicken breast (e.g., from rotisserie chicken)
freshly ground pepper, to taste
1/4 c coarsely chopped parsley
Heat the oil and butter in a four-quart saucepan. Rinse the frozen vegetables in a mesh strainer under cold, running water for 30 seconds to refresh them, drain well, and add to the hot fat. Cook over moderate heat for five minutes, stirring occasionally. Add the water, chopped tomatoes, and seasonings, and bring to a gentle boil. Cook covered for about 15 minutes, until the potatoes test done with the tip of a knife. Stir in the cooked chicken, pepper, and parsley. Let stand 10 minutes for flavors to meld. Serves four.

Candied Sweet Potatoes

Recorded Fall, 2015. Family recipe used for decades. Baking in the skin rather than boiling keeps out water and concentrates the flavor and sugars, and is more easily controlled.
3 large sweet potatoes
3 T (50 g) butter
1/4 c (50 ml)  brown sugar
1/4 c (50 ml) water
2 t (10 ml) lemon juice
1 t (5 ml) ground cinnamon
salt and pepper
1/2 c (125 ml) walnut pieces
Choose sweet potatoes that are straight and uniform in width. Prick potatoes all over with a fork to release steam and microwave on high (@1250 W) until just soft, about 12 minutes, but do it in steps since they cook quickly toward the end. They will emit steam and juice when done, but don’t overcook. Texture should be soft but not mushy. Alternatively, bake the potatoes directly on the rack at 325 degrees F (165 C). When cool, peel off the skins, slice lengthwise and then into 3/4 inch thick (~2 cm) half-rounds. Heat the butter, sugar, and water in a medium non-stick skillet, stirring to form a syrup. Arrange the potato slices in the hot syrup, add the cinnamon, nuts and lemon juice and cook slowly uncovered, until tender, about 30 minutes, replacing water as it’s lost. Cover and keep warm until serving. Serves 6 to 8.

Smashed Red Potatoes with Crispy Parsley

Developed April, 2015 as a side dish for kielbasa in mustard sauce. Choose potatoes about the same size.
8 oz small red potatoes
1 T salt
1 T butter
2 T finely minced parsley
1 T finely minced chives or green onions
salt and pepper to taste
Cover potatoes with water in a small saucepan, add the salt, and bring to a gentle boil. Cover, reduce heat, and cook gently until easily pierced by a knife point, about 10 to 12 minutes. Drain well and set aside. Heat the butter in the dry saucepan until it sizzles and begins to brown. Add the parsley and sauté until crisp. Add back the potatoes, add the chives and toss to coat. Off heat, crush lightly with a potato masher. Add salt, pepper, and extra butter to taste. Serves two.

Crispy Toaster-Oven Frites

Developed November, 2013. The method combines tapioca starch and coarse semolina flour to produce a crispy fry in the toaster oven from scratch. Almost as good as bistro frites. Almost.
1 medium russet potato (about 6 oz), cut into 1/4 inch square strips
1 T vegetable oil
2 t tapioca starch
2 T semolina flour (coarse grind)
1/2 t salt
1/2 t onion powder
Choose a long, clear russet potato. To prepare raw fries, cut off a small slice from both ends, and then trim a small slab with a chef’s knife off one side. Turn the potato onto that cut surface to steady it, and trim off the next face, and then the next two in turn. Cutting in the long direction, slice the potato into 1/4 inch (6 mm) thick slabs, and then into 1/4 inch wide strips. Rinse, drain, and thoroughly blot dry before use. Transfer the potatoes to a non-stick 8X8-inch (20x20 cm) metal baking pan, add the other ingredients and toss well to coat evenly. Preheat a toaster oven to 425 degrees F (220 C). Bake 15 minutes, turn the potatoes over, and bake another 10 minutes until cooked through and crisp. Serves one or two. Can be easily doubled. Variations: Top a hamburger sandwich with a few crispy fries to add crunch and flavor, or add to a breakfast wrap, serve as a hot appetizer with a side of spicy mayonnaise or remoulade.

Red Bliss Potato Salad with Crispy Bacon

Developed January, 2014. Modified from an Emeril Lagasse recipe. Pairs nicely with kielbasa or roast pork.
1 lb red bliss potatoes, about 1-1/2 inches diameter
1/4 c olive oil
1/2 c red onion, short shreds
1/4 c red bell pepper, diced
1 T minced garlic
3 to 4 T red wine vinegar, to taste
3 slices toaster-oven bacon, chopped
salt and freshly ground black pepper
1/4 c chopped fresh parsley
Clean the potatoes, transfer to a saucepan, cover with water by 1 inch, add a tablespoon of salt and bring to a gentle boil. Cook until the potatoes are easily pierced by a paring knife, about 15 minutes. Drain and cool on a clean towel. While the potatoes are cooking, heat the olive oil in saute pan, add the pepper and onion and salt lightly. When softened and lightly colored, add the garlic and sauté another 30 seconds. Take off heat. When potatoes are cool enough to handle, quarter them and place in a serving bowl. Toss with the vegetables and oil, season to taste with vinegar, salt and pepper. Toss with the bacon and parsley. Serve warm.

Toaster Oven Roast Potatoes

Toaster Oven Roast Potatoes with Rosemary
Developed April 3, 2013. Good companion to pork and beef.
5 to 6 small russet or red skin potatoes
3 to 4 T olive oil
2 t coarse salt
1/2 t freshly ground black pepper
1/4 t granulated garlic
Put the potatoes in a small sauce pan, cover with an inch of cold water, add a teaspoon of salt and bring to a gentle boil. Slowly boil for 10 to 12 minutes, until the point of a sharp knife barely enters. Drain thoroughly and transfer to a kitchen towel to dry and cool. Preheat a toaster oven to 350 degrees F (177 C). When cool enough to handle, cut the potatoes lengthwise and, if russets, peel off the skins. Arrange in baking pan with the cut sides down. Drizzle on half the oil, season well with salt, pepper, and garlic. Turn each piece with tongs until well coated. Turn flat side down and roast for 15 minutes. Turn each piece, and return to the oven for another 10 to 15 minutes until nicely browned and tender on all sides. Serves 2 to 3. Variation: Include 2 teaspoons of finely minced fresh rosemary with the other seasonings.

Toaster Oven Waffle Fries

Prepared December 5, 2013. Adding the extra oil and semolina half way through roasting gives extra crispness. 
2 c frozen waffle fries
2 T vegetable oil
1 t salt
1/4 t ground black pepper
1 t smoked paprika
1 t onion powder
2 T coarse semolina flour
Preheat a toaster oven to 450 degrees F (230 C). Spread the frozen potatoes evenly in the pan and roast for 10 minutes. Remove from oven, drizzle on oil, and toss lightly with tongs. Sprinkle on the seasonings and toss gently to coat. Toss with semolina, adding extra oil as needed, and roast for 10 to 15 minutes more, until well browned and crispy. Serves 2 to 3.

Quick & Easy Pierogi

Recorded November 15, 2013. Prepared many times. This recipe was inspired by the dish DrDaddy first tasted at a Bosnian cafe, near Vancouver, BC in the late 1960s.
1 lb package frozen potato-onion pierogi (Mrs. T’s™ are good)
1 cup onion, thinly sliced
1 T sweet paprika
2 T butter
3/4 c sour cream
salt and pepper to taste
Melt the butter in a large skillet over medium heat. Add the onions and cook until soft and lightly colored. Off heat, stir in the sour cream and seasonings. Bring 2 quarts of salted water to a boil in a 3-quart sauce pan. Cautiously add the frozen pierogi. prying them apart if needed. Return to a gentle boil. After 5 minutes, transfer each as they finish cooking with a slotted spoon to the onion-sour cream sauce. When all the pierogi have been added, return the skillet to medium-low heat, turning gently to cover with sauce. Add a little cooking water to lighten the sauce as needed. Warm through gently. These little pies are tender. Serves 4.

Pan Roasted Potatoes

Pan Roasted Potatoes with BBQ Turkey Thighs
Prepared Sept 22, 2013. Semolina is coarsely milled durum wheat. It contributes to the crispy brown crust. The smoky flavor from the paprika makes this a good side dish for grilled meats.
1 lb small white or yellow potatoes
3 T vegetable oil
1 T butter, cut into small pieces
2 T semolina
1 T smoked paprika
salt and pepper to taste
Place the potatoes into a small sauce pan, cover with water, and salt lightly. Bring to a boil, lower the heat to fast simmer, cover, and parboil 8 minutes. Drain, spread on a clean kitchen towel. [Optional: Cool by fanning to speed things along.] Slice lengthwise and then crosswise in 1/4 inch slices. Toss with seasonings and semolina to coat evenly. Heat the oil in a 10-inch SS skillet over medium high. When smoking, add the potatoes and mix gently with the oil. After a minute, add the butter and mix when melted. Fry 4 to 5 minutes undisturbed until a nice crust forms on the bottom. Gently turn, and finish cooking the other side. Serves 4.

Microwave Potato Meal

Recorded October 9, 2012. Tasty, nutritious, cheap, and fast. Breakfast or lunch or dinner. Oiling the skin, keeps it tender in the microwave, and the crust of salt adds flavor and texture.
1 medium russet potato
vegetable oil
kosher salt
1 T tub margarine or butter
1/3 c low-fat cottage cheese
2 T low-fat sour cream
1 t chopped chives or green onions (optional)
Scrub and dry the potato. Prick with a sharp knife about 10 times. Oil the skin, moisten the top, and sprinkle on the coarse salt. Microwave on high (1250 W) for 4 minutes or so. Cut lengthwise and then across, and press together edges to form a pocket. Scoop the butter or margarine into the hollow, mix in, add the cottage cheese, top with the sour cream, and garnish with chives or green onions.
