Broiled Lamb Chops

Lamb chops grilled under the broiler provide a luxurious meal in a hurry. The spice mixture enhances the savory flavor of the meat.
4 1.5 inch-thick loin chops

2 t olive oil


Dry Rub for Lamb

1 T kosher salt

1 t dry rosemary

1 t coriander seeds

1 t porcini powder

1 t dry thyme
1/2 t sumac

1/2 t granulated garlic

1/2 t black peppercorns

Process the dry ingredients to a powder in a spice/coffee grinder or mortar and pestle. Blot the chops dry, drizzle oil on both sides, and then sprinkle the rub on both sides. Use a teaspoon per pound. Store the unused rub in a tight container. Marinate the chops an hour at room temperature. Preheat the broiler to the low setting (if available). Place the rack 8 inches below the elements. Position the seasoned chops on a grill pan. Broil 6 minutes on the first side, turn, and grill another 4 minutes. Check the internal temperature for 125 F.  Rest the chops for a few minutes under a cover. Serves two to four. Suggested sides: kasha and green beans.

Leg of Lamb Roasted with Potatoes and Garlic

Developed December, 2019. Adapted from a method shown by Ira Garten on Food Network TV.
Roast Lamb with Potatoes and Garlic
5 to 6 lb (2.5 kg) boneless leg of lamb, tied or netted
1/4 c (half stick) butter
2 T fresh rosemary leaves, finely minced
2 T kosher salt, divided
1/2 T coarsely ground black pepper
3 T minced garlic
4 lb (2 kg) yellow or red potatoes, whole or quartered, skins on (omit for keto)
1/4 c olive oil
8 garlic cloves, unpeeled
An hour before roasting, rinse and dry the roast. Place it in a large roasting pan. Melt the butter in a small bowl in the microwave, stir in half the salt and the other seasonings and spread all over the top of the roast and let stand at room temperature. Preheat the oven to 450 F (230 C) and position the rack to midway. In a large bowl, combine the potatoes and unpeeled garlic cloves, the oil, half the salt, and mix well. Surround the roast with the potatoes and place in the oven uncovered. Roast for 75 to 90 minutes, until the internal temperature reaches 135 F (60 C). Tent with aluminum foil and let rest 15 minutes. Cut thin slices horizontally along the roast. Arrange on a platter with the roast potatoes. Serves 10 or more. Roast asparagus are a good side dish.

Osso Buco

Prepared December 29, 2012 by Laura using lamb shanks. Modified from Lidia Bastianich's recipe broadcast on PBS-TV. Although classically prepared with veal shank, lamb or fresh pork shank can be used instead, with essentially the same cooking method. Each is a 'bone with a hole', or osso buco in Italian, with meat having a similar flavor and texture.
4 fresh (or 6 dried) bay leaves
1 sprig fresh rosemary
6 whole cloves
6 strips of orange rind, cut with a vegetable peeler
6 pieces 2-to-3-inch thick veal shank (or use lamb or pork shanks)
about 3 c chicken, veal, or beef  stock
3 T extra-virgin olive oil
2 t kosher salt
2 large onions, cut into 1-inch chunks
4 ribs celery, cut into 1-inch chunks
6 medium carrots, cut into 1-inch chunks
2 medium parnsips, cut into 1-inch chunks
2 leeks, white part only, cut into 1-inch lengths
3 T tomato paste
1 T garlic, minced
1 c dry white wine
2 T grated orange zest as garnish
If using veal or pork, tie butcher's twine snugly around the circumference to hold the meat together while cooking. Tie the herbs, cloves, and orange peel strips up in cheesecloth. Salt the meat well on all sides and let it come to room temperature. Heat the stock (hint: use a one-quart measuring cup in the microwave). In a large heavy Dutch oven over medium heat, brown the shanks in olive oil on all sides. Set meat aside, add more oil as needed, and add the vegetables. Cook over medium high until lightly colored, about 6 minutes. Add the tomato paste and cook for a minute or two, and then the garlic for 30 seconds. Add the meat back to the pot, add the herb bundle, and add hot stock until the meat is two-thirds covered. Adjust the heat to a fast simmer, cover and cook, turning every 30 minutes until tender, about 90 minutes. To serve, remove the vegetables to a platter, and arrange the meat on top. For veal or pork remove the strings before serving. Remove the herb bundle, and raise the heat to a boil, and reduce the pan liquid to form a smooth sauce, and spoon over the meat. Garnish with orange zest. Pairs nicely with a mushroom and leek risotto

Roast Meat Stewed with Onions and Garlic in Salsa Verde

First prepared May 23, 2005. Last modified April 8, 2007.
2 medium or 1 large yellow onion, coarsely diced
2 T garlic, finely minced
2 c roast or grilled meat, cubed (e.g., roast pork, beef, chicken, turkey, lamb)
16 oz jar salsa verde (Herdez™ is good)
1 t Mexican oregano
1 t ground cumin
1 t salt
2 T vegetable oil

Brown onion in oil. Add garlic, cook lightly, and add meat. Brown the meat-onion mixture well. Add the seasonings and salsa. Lower heat, cover, and simmer until meat is very tender, about 90 minutes. Stir occasionally, and replace any water lost by evaporation. Serves 4 to 6, as part of a multi-course meal. Warm tortillas are a must on the side. Mexican-style rice, refried beans, salad — that's eating!  
VariationsAdd a 10 ounce can of diced tomatoes with mild green chilies (Rotel™ is good). Or, substitute prepared salsa casera for salsa verde.

Chimichurri Sauce

Created April 8, 2011 by Laura for use with pan-grilled rib lamb chops. The herbs come from her garden. Other mild aromatic herbs, as available, can be used.
1/4 c flat leaf parsley
1 T fresh thyme
1-1/2 T garlic, minced
about 1 T olive oil
3 t fresh mint
1/8 t crushed red pepper
3 T fresh oregano
2 T shallot, finely chopped
2 t red wine vinegar
2 t lemon juice
salt and freshly ground pepper to taste
Saute the garlic and shallot is 1 T of oil in a small sauce pan. Finely chop the parsley, thyme, mint, and oregano. Heat for a few minutes over moderate heat to bloom the herbs. Serve on the side with grilled beef or lamb.
