1 lb kielbasa or similar sausageCut the sausage into four pieces crosswise and then each piece in half lengthwise to yield 8 pieces. Heat the oil over medium in a six-quart saucepan. Fry the sausage, cut face down until browned, flip and brown the other side. Add the cabbage, the stock concentrate, the peppercorns, and the water. Bring to a gentle boil. Cook 5 minutes, add the potatoes (and onions if using), and continue cooking until the potatoes are tender, about 15 minutes. Add salt to taste. Serve in big bowls with some of the stock. Offer spicy mustard on the side. Variation: Add a medium yellow onion, quartered through the root, with the potatoes. Serves four generously.

4 c green cabbage, cut into wedges
1-1/2 lb (2-1/2 c) thin-skinned potatoes cut into 3/4 inch pieces
2 T beef stock concentrate (Better Than Bouillon™ is good)

1/2 c chopped celery with leavesIn a two-quart sauce pan, heat the oil over medium high. Add the celery, lower the heat, and cook covered for 5 minutes. Stir in the tomato and dry onion, cover, and cook a few minutes more. Add the water and seasonings and bring to a boil. Stir in the soup mix and simmer 10 minutes, stirring occasionally. Stir in the green onion and chicken. Serves 4 as part of a light meal.

tomato based pasta soup mix (Knorr™)
1/4 c diced green onions
1 oz deli chicken, diced (omit for vegan)
2 dozen littleneck clamsRinse the clams in cold water. Discard any that are open. Melt the butter in a large skillet over medium heat. Add the minced garlic, shallot and the white part of the green onion. Sauté until translucent, about 3 minutes. Add the wine and simmer for a minute or two. Add the water and return to a simmer. Add the clams and the remaining green onion, the other herbs, and the lemon juice. Cover the pan and steam gently for about 4 minutes or until all the clams open. Divide the clams into two bowls. Discard the thyme stem, raise the heat and reduce the liquid by one-third. Stir in the dairy, warm gently, and pour the broth over the clams. Serve with a crusty, warm baguette.

1 T vegetable oilCut the bread in half and heat in a toaster oven at 200 F for 10 minutes to partly dry it. Beat the eggs well and stir in the other ingredients. Heat a 12-inch non-stick skillet over medium heat. Add the oil and butter, and when the butter stops sizzling, soak two pieces of bread on both sides until moist, and add to the hot fat. Repeat for the remaining bread. Pour any leftover batter over the slices. Fry about 3 minutes on the first side until browned. Flip and continue frying until the second side is done. Serves two. Offer sugar, preserves, maple syrup, or fruit sauce.

4 oz frozen tiny peasThaw the peas in cold water and drain. Thaw the onions on a paper towel. Combine the vegetables in a shallow bowl, top with the seasonings, and sprinkle the starch over all. Steam for 4 minutes, mix with tongs and steam another 2 minutes, mix and serve. Serves two. Can be doubled.
4 oz frozen pearl onions
1 T chicken or vegetable stock concentrate
1 t butter, cut into small dice
1 T water
1/2 t salt

1 t tapioca starch
2 eggsBeat the eggs and water in a large bowl. Whisk in the brown sugar and then the white sugar. Stir in baking soda, baking powder, salt, and the vanilla. Whisk in the oil until completely blended. Stir in flour with a rubber spatula and when incorporated, fold in the chocolate chips. Chill dough for 30 minutes in the refrigerator. Preheat oven to 350 F (177 C). Drop level scoopfuls from a #30 disher (32 ml or 1.07 oz) onto a dark, lightly greased baking sheet about two inches apart. Bake 9 minutes and remove immediately to a wire rack to cool. Permit the baking sheet to cool between batches. Store in an airtight container to retain chewy texture. Yields about 32 cookies.

250 ml warm water + 150 ml cool waterIn a large bowl, add warm water (110 F, 43 C), sugar, salt, and sprinkle on yeast. Stir slowly with a stick or spoon handle. After 5 minutes, add the cool water. Stir in the flour, and when incorporated, add the oil, turning the dough over a few times to combine. Cover with plastic film and proof 4 hours in a warm place (about 80 F, 27 C). An oven with the light on is ideal. With the stick, degas, pull, stretch, and fold the dough, sprinkling flour on the outside to prevent sticking. Tip it into a greased 5x9 metal loaf pan and cover with plastic film. Proof a second time for about another hour, until dough rises an inch above the rim. Brush the top generously with olive oil, and bake in a preheated 400 F (200 C) oven for 40 minutes or until top is browned. Turn the loaf out onto a wire rack and let cool before slicing.

2 pita loavesSteam the pitas until soft in the microwave under a moist paper towel or cloth. Preheat toaster oven to 400 F. Pour a tablespoon of olive oil into the oven pan and use it to coat both sides of the pitas. Divide the ingredients on each loaf. Spread tapenade on each, then the hummus thickly, and then distribute the cheese, tomatoes, olives, and the seasonings to taste. Bake 12 minutes or until thoroughly heated through. Serves two.

4 cross-cut beef shanksPreheat oven to 340 F. Salt shanks well, dust both sides with flour, and snip the outside fascia to prevent curling. Arrange meat in the bottom of a covered roaster and top with vegetables, wine, ketchup, spices, and stock. Dust generously with paprika. Roast 25 minutes. Turn meat and vegetables, cover, lower heat to 315 F, and roast for 30 minutes. Turn, add the potatoes, dust with paprika, and continue roasting covered until the meat is fork tender, about another hour. Replace water as it's lost. Variations: Omit potatoes and serve over egg noodles, or substitute beef cheek or shoulder for shank.

Hint: tapioca or corn starch in a shaker jar facilitates this step. Place into an active steamer. After 4 minutes, with tongs, cautiously toss the ingredients together. Continue steaming another 5 minutes or until tender. Toss again and serve. Optional: Garnish with toasted sesame seeds.

Put the cauliflower in a shallow bowl, dot with butter, add the stock concentrate, the water, and sprinkle on the starch. Put the bowl in the steamer for 5 minutes. Cautiously, lift the top, and with tongs, toss the ingredients. Steam another 5 minutes or until tender. Toss again and plate. Serves two.

8 oz assorted tender raw vegetables, cut into serving size piecesPile the vegetables into a shallow bowl. For example, bok choy, spinach; bean sprouts, green onions, shallots, snow peas, sweet peppers, sweet onions, summer squash, enoki mushrooms, and the like work well. Drizzle on the seasonings and sprinkle on the starch. Place into an "improvised steamer". After four minutes of active steaming, cautiously lift the lid and, with tongs, toss the vegetables to coat with sauce. Cover and steam another four minutes. Remove from steamer, toss again, and serve. Serves two.

40 g (1-1/2 oz) dried shiitakeRinse the mushrooms briefly to remove loose dust and place in a heat proof bowl. Pour the hot water over, add seasonings, stir, and cover. Occasionally stir until cool. Use as if fresh. Yields about 240 gram, or 8 ounces. Reserve the liquid for stock.

1 cup French bread, torn into irregular piecesHeat oil over high heat in a small non-stick skillet. When smoking begins, lower the heat to medium high and add the bread pieces. Keep moving for about a minute. When browning of the edges begins, toss with the cheese and the other seasonings. Remove to a plate to cool.

1 slice white bread, finely dicedCover the crumbs with milk and stir to form a smooth paste and set aside. Slowly fry the onions in a tablespoon of the olive oil in a small skillet until soft and translucent. Set aside to cool. In a large bowl, gently mix the meat with a large fork until it is broken up. Work the moist bread, beaten egg, garlic, and the seasonings into the meat, one addition at a time. When the sautéed onions are cool, fold them in, and chill the mixture for 30 minutes to firm up. Heat a heavy stainless-steel skillet over medium-high and add the olive oil. When shimmering, form meatballs, about 1-1/4 inch (3 cm) in diameter by rolling between your two palms. Rinsing your hands with cold water as you work helps form balls. Add each to the hot oil as you make them, and fry about 6 minutes after the last one was added. Shake the pan to loosen them as they cook but let them brown. With a spoon and spatula, turn to brown on the other side. Remove and cover for later use.

2 eggsIn a large bowl, beat the eggs well. Stir in the milk, salt, and nutmeg. Half-cup at a time, stir in the flour with a spoon, until all is incorporated. Let stand 30 minutes to hydrate the flour and permit gluten formation. Bring 4 quarts of salted water to a rapid boil in a six-quart saucepan. Fill the basket of spaetzle maker with the dough, and position over boiling water. Pressing down on the dough mass, slide the basket back and forth over the grate until the water boiling slows. Boil a few minutes until the spaetzlen rise and are firm. Lift out with a mesh strainer to a skillet of hot melted butter or rendered fat. Fry until crusted on bottom, and top with gravy. Serves six.
